I discovered this cake for myself absolutely by chance, but something magical came out 😍😍 You should definitely cook it! It will be just a godsend for people who love cakes with fruit filling. It turns out very soft, juicy and incredibly tasty. Appreciated by everyone, from a child to an adult 😍😍😍
Ingredients: chicken eggs, sugar (≈400 gr), vegetable oil, salt, kefir (≈450 ml), soda, flour (≈400 gr), cocoa powder, Cream, cottage cheese, sour cream, sugar, Filling, currants, sugar (if you want sweeter - more sugar), starch, Impregnation for cakes, sugar, water boiled
Cooking method:
Mix eggs and sugar with a whisk.
Pour in vegetable oil and a pinch of salt, mix.
Pour kefir (warm) and soda into a separate cup, mix everything well. The mass will begin to bubble and increase in volume.
At the time of the reaction, mix with the egg mass and mix.
Next, add the sifted flour and cocoa, mix thoroughly until a smooth thick mass is formed.
Now pour it into a mold covered with parchment (you can use a baking sheet), and send it to a preheated oven for 20-40 minutes. We bake at 180 degrees. Focus on your oven! The baking time will depend on your oven and the depth of the mold. Check readiness with a toothpick.
Let's get some cream. Beat cottage cheese with a blender, add sour cream, sugar and beat everything well until smooth.
Now the stuffing. Berries (I have frozen currants, but absolutely any berry can be cooked in this way) are sent to the fire, add sugar and cook over low heat, stirring constantly. After 5-7 minutes, when the water evaporates and only the syrup remains, remove from heat and beat in puree. Put back on the fire and add starch and mix quickly. On this filling is ready :)
Now let's assemble the cake. Soak the cake and generously grease with cream. We make a side of cream (as shown in the photo) and put the filling in the center. Thus, it will not fall out of the cake and it will turn out very neat.
