Then degas and roll up. Put the blanks on a baking sheet and cover with foil. Leave to proof for 1.5-2 hours. Before baking, make 3-4 cuts. Bake with steam mode top-bottom at t 200 C for 25-30 minutes. Transfer the finished loaves to a wire rack and let cool completely.
