Cooking method:
I choose the fattest and largest ducks for smoking.
I separate the legs and loin from the duck.
I pour plenty of duck meat with salt, cover it tightly with a bag, put a load and leave it for three days.
After this time, I wash the meat under cold water and leave it for 3 hours periodically changing the water once or twice.
We take the meat out of the water, dry it with a dry and clean towel, and tie each piece of meat with a string and hang it to dry in a cool place for 3-4 days.
Soak the chips in cold water for 2 hours, then put them in the Bravo smokehouse or another smokehouse, cover with foil on top and smoke at 90 degrees for 40 minutes.
After the meat is left in the smokehouse for 30-40 minutes, we take it out and leave it for 5-6 hours.
We enjoy delicious and fragrant duck meat.
