A simple and very tasty eggplant salad, which is suitable for daily cooking. Despite the small amount of ingredients, it turns out to be very fragrant and quite satisfying. And to taste, it strongly resembles a salad with fried mushrooms. All eggplant lovers will love this salad. It will greatly diversify your daily menu and even on the festive table it will not be superfluous.
Preparing such a salad is very simple, but it will take a little time to prepare and fry the eggplant.
I highly recommend everyone to try this simple mushroom-flavored eggplant salad.
Ingredients:
- eggplant - 2 pcs.
- eggs - 5 pcs.
- onions - 1-2 pcs.
- sugar - 1 tsp. l.
- salt - 0.5 tsp
- mayonnaise - 2 tbsp. l.
- vinegar - 2 tbsp. l.
- sunflower oil - for frying
Step by step recipe
1. Let's prepare the eggplant. We cut two eggplants first into circles, and then we cut the circles into cubes.
2. Transfer the chopped eggplant to a bowl. Salt them with half a tablespoon of salt and mix. We leave the eggplant for 15-20 minutes so that they release the juice and bitterness leaves them.
3. Now pickle the onion. Cut two small onions into half rings and transfer to a bowl.
4. To the onion pour 1 tbsp. l. sugar, 1/2 tsp. l. salt and add 2 tbsp. l. apple (or table) vinegar. Pour everything with a glass of boiling water and mix until the sugar and salt dissolve. Leave the onion to marinate until the water cools completely.
5. After 20 minutes, put the eggplant in a colander, rinse well with water. Let the water drain.
6. Prepared eggplants are fried in a hot frying pan with a small amount of vegetable oil. Eggplant should be fried in 2-3 approaches, depending on the size of the pan. Fry the eggplants over medium heat until they are soft.
7. We take out the fried eggplants on paper towels to remove excess fat. Transfer the cooked eggplants to a mixing bowl.
8. Cut five boiled eggs into slices.
Dry the pickled onions with paper towels or lay them on a sieve to remove excess moisture.
9. We shift the pickled onions and chopped eggs into a bowl with eggplants. Dressing salad 2 tbsp. l. mayonnaise and mix.
If desired, the salad can be a little salt to taste.
Despite the simplicity of preparation and a small amount of ingredients, the salad turns out to be very tasty and satisfying. It really looks like a salad with mushrooms. I recommend everyone to cook it.
