Ingredients:

Pancakes:

  • milk - 750 ml
  • flour - 300 g
  • eggs - 2 pcs.
  • vegetable oil - 2 tbsp. l.
  • sugar - 1 tbsp. l.
  • salt - 1/2 tsp. l.

Filling:

  • cottage cheese - 500 g
  • sugar - 4 tbsp. l.
  • eggs - 2 pcs.
  • raisins - 100 g
  • vanilla sugar - 10 g

Fill:

  • cream 33% - 200 ml
  • sugar - 2 tbsp. l.
  • eggs - 1 pc.
  • powdered sugar - 1 tbsp. l.
  • butter (for greasing the mold) - 10 g

Step by step cooking recipe:

  1. First, let's prepare the pancake batter. In a bowl, break the eggs, add sugar, salt and beat everything with a mixer until light foam. Add about 300 ml of warm water and mix gently at low speed of the mixer or with a hand whisk. Pour 300 g of flour and mix the dough at low speed until smooth. Pour the remaining 450 ml of warm milk and mix again until smooth. To prevent pancakes from sticking to the pan, pour about 2 tbsp. vegetable oil and mix. Leave the dough on the table to rest for 15-20 minutes.
  2. The dough is infused, fry the pancakes. Before the first pancake, grease the pan with a little vegetable oil. We collect about half a ladle of dough and pour it into the pan, distributing it over the entire surface. We fry pancakes on a fire slightly less than average. When the pancake is browned on one side, flip it over to the other side. So we fry all the pancakes. From this amount of dough, I get 25 pancakes in a pan with a diameter of 24 cm.
  3. Cooking curd filling. My raisins, pour boiling water and leave for 10 minutes. After 10 minutes, drain the water and dry the raisins with paper towels.
  4. We put the cottage cheese in the grinder, break 1 egg, pour sugar and add vanilla sugar. We grind everything to a homogeneous mass. The filling is ready.
  5. Lubricate the finished pancake with about 1 tbsp. l. prepared stuffing. Sprinkle raisins on top of the filling and roll the pancake into a roll. This is how we make all the pancakes. Cut the stuffed pancakes in half.
  6. Lubricate the baking dish with butter. My mold size is 24*32 cm. Lay out the stuffed pancake halves in rows. We put each subsequent row on the previous one.
  7. Prepare filling for pancakes. Pour cream into a bowl, break 1 egg and pour sugar. Mix everything with a whisk until smooth. I use cream with 33% fat, but you can use less fat.
  8. Pour the prepared filling onto pancakes. We cover the form with foil and put in the oven preheated to 180 degrees. Bake for approximately 30 minutes. After 30 minutes, remove the foil and bake for another 10 minutes to brown the pancakes.
  9. We take out the finished dish from the oven. Sprinkle the top of the pancakes with powdered sugar, if desired. Such pancakes with cottage cheese and raisins in the oven are tasty, tender and fragrant.

Ingredients:

Pancakes:

  • milk - 750 ml
  • flour - 300 g
  • eggs - 2 pcs.
  • vegetable oil - 2 tbsp. l.
  • sugar - 1 tbsp. l.
  • salt - 1/2 tsp. l.

Filling:

  • minced pork - 350 g
  • frozen corn - 200 g
  • cheese - 100 g
  • onion - 1 pc.
  • tomato sauce - 2-3 tbsp. l.
  • ground sweet paprika - 1 tsp. l
  • ground black pepper - to taste
  • salt - to taste

Breading:

  • eggs - 2 pcs.
  • breadcrumbs - 100 g

Step by step cooking recipe:

  1. Cooking pancakes according to the recipe from the first video of this collection.
  2. Now let's prepare the filling. We cut a large onion into cubes and sauté until golden in a small amount of oil. Add garlic to the onion through a press and sauté for another half a minute. We also add minced meat to the pan and fry periodically stirring for about 5-8 minutes until the color changes. Pour 200 g of frozen (or canned) corn to the minced meat with onions. Salt everything to taste, pepper, pour 1 tsp. l. ground sweet paprika and add 2-3 tbsp. tomato sauce. Mix everything and cook for another 2-3 minutes. The filling is ready, remove from the fire.
  3. Three cheese on a fine grater
  4. We make pancakes. On one pancake we spread about 1 tbsp. l. toppings, sprinkle with grated cheese. We wrap the edges of the pancake on both sides and twist. In this way we start all pancakes. This amount of filling is enough for 25 pancakes.
  5. Break 2 eggs into a bowl and beat them with a fork until light foam.
  6. Dip the stuffed pancakes first in the egg and then in the breadcrumbs. Immediately put them in a preheated pan with vegetable oil. When the pancakes are browned on one side, flip them over to the other side. Remove the finished pancakes on a paper towel to drain excess fat. We cook all pancakes in this way.
  7. Pancakes in Mexican style turned out very tasty and satisfying.

Pancake pie with mushrooms

Ingredients:

Pancakes:

  • milk - 750 ml
  • flour - 300 g
  • eggs - 2 pcs.
  • vegetable oil - 2 tbsp. l.
  • sugar - 1 tbsp. l.
  • salt - 1/2 tsp. l.

Filling:

  • champignons - 600 g
  • cream 10% - 200 ml
  • onion - 1 pc.
  • flour - 1 tbsp. l.
  • salt - to taste
  • ground black pepper - to taste

Fill:

  • eggs - 3 pcs.
  • milk - 150 ml
  • cheese - 50 g
  • salt - to taste
  • ground black pepper - to taste

Step by step cooking recipe:

  1. We cook pancakes according to the first recipe from this collection.
  2. Cooking mushroom stuffing. Cut a large onion into quarter rings. Cut mushrooms into slices. Fry the mushrooms in a dry frying pan over high heat until the liquid evaporates. Pour a little vegetable oil into the pan and put the chopped onion. Saute everything until the onions are done. Salt the mushrooms to taste, pepper and mix. Sprinkle 1 tbsp over the mushrooms. l. with a slide of flour and mix well. Pour 200 ml of cream with a fat content of 10-15% here and cook everything until the cream thickens. The filling is ready, remove it from the heat and leave to cool.
  3. We make pancakes. On each pancake lay out on one side about 2 tbsp. l. mushroom filling and roll the pancake into a tube. This is how we make all the pancakes. I had enough filling for 8 pancakes.
  4. Lubricate the baking dish with butter. Put stuffed pancakes in it in a circle. For a form with a diameter of 22 cm, it took 8 stuffed pancakes. If your form is larger than mine, then the number of stuffed pancakes can be increased by putting a little less stuffing in them.
  5. Preparing the filling for the casserole. Break 3 eggs into a bowl and pour 150 ml of milk. Salt and pepper everything to taste. Stir with a whisk until smooth, without beating.
  6. 50 g of three cheese on a coarse grater.
  7. Pour the prepared filling onto the pancakes in the form. Top everything with grated cheese.
    We put in the oven, preheated to 180 degrees. and bake for approximately 35 minutes.

  • milk - 750 ml
  • flour - 300 g

Curd stuffing:

  • cottage cheese - 500 g
  • lemon - 1 pc.
  • sugar - 3 tbsp. l.
  • vanilla sugar - 8 g

Step by step cooking recipe:

  1. First, prepare the dough for pancakes. In a bowl, break 2 eggs, pour sugar, salt and beat everything with a mixer until light foam.
  2. We take 750 ml of warm milk and pour about 300 ml into the bowl with the eggs and mix gently at low speed of the mixer. Pour flour here and mix the dough at low speed until smooth. Pour the remaining 450 ml of warm milk and mix again.
  3. To prevent pancakes from sticking to the pan, pour about 2 tbsp. vegetable oil and mix. At the very end, add 2 tbsp. l. poppy seeds and mix again. Let the dough rest on the table for 15 minutes.
  4. Preparing curd filling for pancakes. Remove the zest from the lemon with a fine grater (only the yellow part). We put cottage cheese in the chopper bowl, pour vanilla sugar and sugar. Add the lemon zest to this and grind everything until smooth. If the cottage cheese is dry, then you can add 1-2 tbsp. l. sour cream. Adjust the sweetness of the filling to your liking.   3. At the very end, add 2 tbsp. l. vegetable oil so that the pancakes do not stick to the pan. Mix again. Let the finished dough rest for about 15 minutes.
  4. We fry pancakes. Grease the preheated pan before the first pancake with vegetable oil. Each time, before you take the pancake dough, you need to mix it a little. Pour the batter into the pan and spread evenly over the entire bottom. We cook pancakes on a fire slightly less than average. When the pancake is cooked on one side, flip it over to the other side. Thus, we prepare all pancakes. From this amount of dough, I got 15 pancakes.
  5. Cooking stuffing for pancakes. Put the cottage cheese in the bowl of the grinder, pour the sugar and grind everything until smooth. If the cottage cheese is dry, then you need to add 1-2 tbsp. l. sour cream. Pour 80 g of coconut flakes to the cottage cheese and mix everything. The filling is ready.
  6. We make pancakes. We put a pancake and grease it with curd-coconut mass. From above, from one edge of the pancake, put a strip of 1 tbsp. l. raspberry jam and roll the pancake. This is how we make all the pancakes.
  7. Cut the finished pancakes in half. Lay out on a plate. Top pancakes, for beauty, you can sprinkle a little coconut.
