Let's remember together the recipes from old culinary notebooks, with pages that have turned yellow from time to time ...
Cake "Napoleon" - the same!
Cakes:
12 Art. l flour + 200 gr. margarine + 100 gr. butter = chop with a knife
1 tbsp. ice water + 1 egg + 1 tbsp. l. vinegar 9% = pour over flour mixture and chop with a knife
Knead the dough, divide into 8-9 pieces. Roll out the cakes and bake until light golden brown.
Cream:
0.5 l milk + 0.5 tbsp. sugar + 2 tbsp. l. flour = boil the custard until thickened over low heat or steam
1 tbsp. sugar + 200 gr. butter = beat into the cooled cream
Collect the cake, brush with cream, sprinkle with crumbs. Keep in the refrigerator for 2-3 hours to soak.
Of course, these recordings were mainly baked goods, desserts and winter preparations from vegetables and fruits.
But sometimes I came across something completely unusual and very festive ...
With meat in those days there was a "tension", but this did not in the least interfere with pampering your family at least once a year with delicious dishes: belyashi, pasties, meatballs in sour cream sauce, homemade dumplings, French meat under a layer of potatoes and Luke... Remember?
Here's another very, very old recipe. And Easter, by the way, is excellent. The main thing is to take good cottage cheese if you find it.
Let's go back to blanks or "seaming". Many grandmothers still collect newspaper clippings with recipes.
They try marinades, canning tomatoes and cucumbers, and then make such notes: "tasty", "not very", "breaks the lid" and "not worth it."

Virtually all of those decrepit scrapbooks contain these valuable notes.
Why are there no soup recipes in notebooks? There is. Not much, but they do meet. This is borsch with donuts or prunes, kharcho, shurpa, pea.
And they knew how to cook cabbage soup, with rice, and with noodles and without a prescription.
There are also few snacks in the records. And then they are all unpretentious, such as sandwiches with sausage mass or boiled egg with "canned food".
Well, what about without the beloved herring.
Or here - baked carp. Bony he is, no matter how you prepare. Only the pike is worse. But how delicious! And the crust is awesome!
Served on a festive platter that was kept in a cupboard or sideboard for special occasions.
Carp baked in sour cream
Gut and clean large carp, make incisions along the ridge. Season with salt and pepper.
Chop the onion coarsely, mix with pieces of butter. Stuff the carp with the onion-oil mixture.
Put in a mold, brush with sour cream and bake in the oven.
These are not all recipes from old notebooks. Only a tiny part of them.
