A very rich, beautiful and tasty dish. If you have a pike in your freezer and you haven't been able to use it yet, then this is your chance to shine!
Ingredients:
big pike
2 carrots
100 g salted bacon
3 boiled egg yolks
100 g loaf (milk or sliced)
100 ml milk
1 raw egg
salt
black pepper to taste
50 ml vegetable oil
sour cream or mayonnaise for greasing
How to cook:
1. Wash the pike, remove the scales. But don't gut!
2. Make an incision in the fish near the head (behind the gills) and using a spoon to remove the skin from the pike like a "stocking". Lay the skin aside.
If possible, then the head should be left "dangling" on the skin. But if not, then we are not worried.
3. Now start gutting. Remove the entrails, separate the meat from the bones and remove all possible bones. Rinse the head and save!
4. Pass the resulting pike fillet and a piece of salted bacon through a meat grinder with the finest grate 2 times.
5. Soak the loaf pieces in hot milk for 20 minutes.
6. Wash the carrots, scrape, grate and lightly fry in vegetable oil.
7. Cooking minced meat: add 3 crumbled boiled yolks, 1 raw egg, slices of loaf squeezed from milk and sautéed carrots to the scrolled pike fillet. Season with salt and pepper to your taste.
You can also add herbs, garlic or fried onions - that's not for everybody.
8. Stuffing the pike: very carefully put the minced meat in a "stocking" made of leather, using a teaspoon.
Important! No need to ram! The fish skin will burst! Better to let it be not plump and even dry. The peel will tighten in the oven.
9. Place the stuffed pike on a greased baking sheet or on a non-stick mat and shape it to the desired shape. Do not forget and "attach" the head to the body correctly. If you can preserve it when removing the skin, then it's super!
10. Grease the fish with mayonnaise or sour cream on top.
11. Place the fish in an oven preheated to 180 degrees for 45 minutes.
Done!
We spread the fish on a dish, decorate with vegetables and herbs. You can cut the pike into pieces at once in portions and lay a circle of lemon between each.
The mesh or patterns from a thin thread of mayonnaise also look incredibly beautiful. The beauty!
