In zucchini season, you should definitely try to cook different dishes with them.
Given that the zucchini themselves are not very high in calories, you can experiment with additives that will give an unforgettable taste to the dish.
Today I want to tell you how I cook zucchini pancakes. It seems that everyone cooked zucchini pancakes. And I suggest you try adding cheese and garlic - it's insanely delicious!
✅I needed the following ingredients:
- 2 small zucchini (980 g),
- 2 chicken eggs (120 g),
- cheese - 130 g (I have an ordinary semi-hard Russian cheese, but it is better to add suluguni - it will be less high in calories),
- whole grain flour (I have rice - 40 g),
- garlic (3-4 cloves) - 20 g,
- salt, black pepper,
- a teaspoon of vegetable oil for frying.
✅Cooking.
First of all, we rub the zucchini on a coarse grater and squeeze them well so that there is less moisture. I did 3 laps.
We also rub the cheese on a coarse grater. Grate the garlic on a fine grater.
Next, add eggs to the zucchini, salt and pepper. We mix. If a lot of juice is released, drain it.
Next, add cheese, garlic and flour.
Mix well and go to the stove.
Preheat the skillet well, then reduce the heat to medium.
Lubricate the pan with a drop of oil and spread the squash mixture with a spoon. Gently shape the pancakes.
We fry on both sides.
When hot, the pancakes are very tender and must be carefully turned over, they can disintegrate.
A sauce based on soft cottage cheese or natural yogurt is perfect for pancakes.
I used soft cottage cheese, which I added a little salt. I added finely chopped dill to the curd and mixed.
The simplest sauce for squash pancakes is ready.
