If you cook shrimp, it means that you do not know how to cook them properly. To be honest, I used to cook them too, but for several years now I haven't cooked them. And in this article, I will tell you why you do not need to cook and how to cook correctly.
Most of us buy shrimp from chain stores in packages. As you know, they are pink / orange. This means that they are already boiled!
In nature, shrimps are gray. Immediately after being caught, they are boiled, then frozen, and then packaged. That is, if you bought pink-orange shrimp, it means that they are boiled, and you do not need to boil them again. And if you bought gray shrimps, then you need to cook them. But on sale in supermarkets, these are rarely found.
IMPORTANT! The only exception is Argentine shrimp. In nature, they are pinkish-red, not gray.
And now I’m telling you how I cook shrimp, which is already boiled. I know that some of them simply defrost them, and then immediately peel them and put them, for example, in a salad, or just eat them. This option, I think, is unacceptable.
In this case, I dip the shrimp in boiling water for 5-10 minutes. They are not boiled, but simply placed in hot water and soaked in salt and aromas of spices and herbs.
To improve the taste of the shrimp, I add salt, herbs, bay leaf to the water and, previously boiling for a few minutes (without shrimp, of course), let it cool a little and only then lower it shrimp.
If I cook a dish with shrimp, for example, creamy shrimp soup, then I do not cook them in the soup. And I add at the very, very end, when I turn off the fire.
I strongly do not recommend boiling shrimp. First, they become rubbery, just like squid if cooked for a long time. And secondly, they lose their taste. So do as I do - and you will see that the shrimp cooked in my way is much tastier than boiling them. Bon Appetit!
