Steps
The first secret to the splendor of the pancakes: kefir should be warm or at room temperature, but in no case cold from the refrigerator.
In a warm environment, the reaction of soda and kefir will be faster and better.
Mix egg with sugar, salt, add vanillin if desired for flavor. Pour in warm kefir, stir. Add the sifted wheat flour in portions, kneading the thick dough.
Do not add too much flour, otherwise the pancakes will be "clogged", but not too little, so that the pancakes do not spread too much in the pan. Add baking soda and mix everything.
Leave the finished dough at room temperature for 15 minutes so that the reaction of soda and kefir takes place and the flour gluten works, this is the second secret.
In no case mix the finished dough so as not to destroy the airiness. This is the third secret to fluffy pancakes. Gently spread the dough with a spoon on a hot frying pan with vegetable oil.
