Delicious, one might say melting in your mouth, pie with berries.

The cake is prepared very simply, according to the principle, everything is mixed and ready.

The pie has a very tasty, moderately sweet dough. In addition to the sour berries and sweet airy meringue, the pie is incredibly tasty, tender, and stays that way until you eat it.

Let's cook

The dough is prepared very quickly, so you can immediately turn on the oven to heat up to 180 degrees and prepare a baking dish.

I bake in a 21 cm split pan.

I cover the bottom of the form with parchment paper.

Grease the side of the mold with a small piece of butter and sprinkle with flour.

Divide 3 eggs into whites and yolks.

Add one whole egg to the yolks.

We put the squirrels aside, a little later we will prepare a meringue from them.

Mix together

  • 3 yolks and one whole egg
  • 100 grams or 5 tbsp. l. no top sugar
  • 10 grams or 2 tsp l. vanilla sugar

Beat at maximum mixer speed.

The egg mass should become light and increase in volume by about 2.5-3 times.

Add

  • 130 grams or 2/3 tbsp. 250 ml of vegetable oil
  • 80 grams or 1/3 tbsp. 250 ml of milk at room temperature

Stir at low speed of the mixer until smooth.

  • 170 grams of wheat flour is 1 tbsp. volume 250 ml + 1 h. l.
  • Add 10 grams or 2 tsp. l. baking powder and a pinch of salt

We mix.

Sifting, add to our mixture.

Stir at low speed of the mixer, until smooth, not for long.

Once all the ingredients are combined, that's enough.

Collect the dough from the walls and stir along the bottom.

The dough turns out to be very tender, it flows easily from the shoulder blade.

Immediately add 200 grams of frozen berries to the dough, and mix quickly, not for long.

If you stir for a long time, the dough from the berries will turn colored and become streaks.

We transfer the dough to the mold. We level.

I flatten from the middle to the edges so that the cake after baking is even, and not semicircular "with a cap".

We remove to bake in an oven preheated to 180 degrees for 45-50 minutes, until fully cooked. My cake was baked for 50 minutes.

We check the readiness of the cake with a wooden skewer, pierce it, if it comes out dry, then the cake is ready.

Reduce the heat in the oven to 160 degrees and beat the whites for the meringue.

  • In 120 grams or 6 tbsp. l. no top sugar
  • add 10 grams or 2 tsp. l. vanilla sugar

We mix.

Pour 3 squirrels into a clean, dry bowl, add a pinch of salt.

Begin to beat at low mixer speeds, gradually increasing the mixer speed to medium.

When the whites beat into a foam, without ceasing to beat, add sugar with powdered sugar to them.

We introduce it gradually, adding in parts.

When the sugar has been added, we continue to beat at medium speed of the mixer until the sugar is completely dispersed.

For the preparation of meringue, it is better to use powdered sugar or fine crystalline sugar.

When the sugar dissolves, increase the speed of the mixer to the maximum, and beat the protein mixture until stable peaks.

We shift the whipped egg whites onto the cake, and spread over the entire surface.

We make bulges and depressions with a spoon.

Whichever pattern you form, this will be the finished cake.

On top, for beauty, I sprinkle the proteins with chopped pistachios.

We remove the pie and bake in an oven preheated to 160 degrees for 30-40 minutes, until golden brown on top.

We take out the finished cake from the oven and let it cool completely in the form to room temperature.

When the cake has cooled down, it will settle a little and move away from the walls of the mold.

I like to cook this pie with frozen small berries, such as black or red currants, or lingonberries.

The pie is delicious, I advise you to cook it!

Ingredients designed for pie with a diameter of 21 cm, a height of 7 cm, weighing 950 grams.

  • In 1 tablespoon without top 20 grams of flour, with top - 30 grams.
  • In 1 tablespoon without top, 20 grams of sugar, with top - 25 grams.

Dough

1 egg
3 yolks
100g (5 st. l. no top) sugar
10 grams (2 hrs. l.) vanilla sugar
130 gram (2/3 st. volume 250 ml) vegetable oil
80 gram (1/3 Art. volume of 250 ml) milk (room. t)
170 gram (1 tbsp. volume 250 ml + 1 h. l.) wheat flour
10 grams (2 hrs. l.) baking powder for dough
A pinch of salt
200 grams frozen black currant (red currant, lingonberry)

Bake in an oven preheated to 180 degrees for 50 minutes.

Meringue (meringue)

3 squirrels
120 grams (6 Art. l. no top) sugar
10 grams (2 hrs. l.) vanilla sugar
A pinch of salt

Sprinkling

10 grams chopped pistachios

Bake in an oven preheated to 160 degrees for 30-40 minutes.
