In today's article I want to tell about the way of cooking old chicken, so to speak retired chicken. Of course, it will be difficult to find such a chicken in popular grocery stores, since most of this bird is on the shelves of broilers. But just in case, it doesn't hurt to know this method. It all started when I decided buy a village chicken and went to a farm products store. There I was offered one of the available chickens, and it seemed to me that the bird has an unusual blue hue. Asking what was the matter, the seller replied that this was not a young chicken raised on chemistry, but a real village one, which has been knocked for a couple of years. To my next question what it will taste like, the seller told me how to cook such chickens, in which the meat will be very delicate and soft. It turned out, she did not deceive me.
Preparing the chicken. Cut into 4 parts, fill cold water and put on fire. After boiling water, cook for 30 minutes, of course, do not forget to remove the foam. Scroll the photo to the right.
Turn off the fire and transfer the chicken to another pan. Pour in the chicken and leave for 5 minutes. After this time, transfer the chicken back to the broth and cook another 40 minutes, filling the broth. When we get the meat, it will be very tender and soft.
