I saw this recipe with a photo in one magazine, and could not resist not to cook this appetizer / salad. The result exceeded all expectations.
So, for the salad we need:
- Beets - 2 pcs.
- Cottage cheese or goat cheese - 100 gr.
- Garlic - 2 cloves
- A handful of toasted sunflower seeds
- A handful of chopped dill juice of half a lemon
- Olive oil 2 tablespoons
- Handful of pomegranate seeds
- Sour cream -1 spoon to taste
- Pinch of red pepper
- A pinch of salt
First you need to fry the seeds.
Mix curd cheese with garlic, add seeds.
Chop the dill finely and add to the curd filling as well. If you see that the curd filling is very thick, you can add a spoonful of sour cream to make it easier to spread it on the beets. Salt.
Cut the beets into slices. Put some of the filling on the beet slice, cover with the second slice.
Then another layer of filling and another slice of beets. There should be 3-4 layers in total, otherwise it will be uncomfortable for you to eat salad.
Sprinkle the salad with pomegranate seeds.
Add lemon juice and red pepper to olive oil. Drizzle over the salad. Decorate with herbs.
