I share with you a recipe for an amazing chocolate zucchini muffin.
After a recent trip to my mother-in-law, I returned with a large bucket of zucchini. We love them very much in the family, but not in such quantities.
The wife had already managed to make preparations for the winter, but the zucchini still did not end. Then I came to the rescue. I am not interested in blanks, but zucchini can also be added to desserts.
I decided to make a chocolate muffin with zucchini and then treat my mother-in-law to them. When the cupcake was destroyed in a matter of minutes at a party after the tea party, I realized that it was a success. And after all, no one even thought that it included vegetables.
Step by step recipe on how to make a chocolate zucchini muffin
Ingredients per form 18 cm in diameter:
- Zucchini 250 g
- Flour 100 g
- Almond flour 60 g
- Cocoa 22 g
- Baking powder 3 g
- Soda 2 g
- A pinch of salt
- Sugar 80 g
- Eggs 2 pcs
- Kefir 25 g
- Butter 50 g
- Dark chocolate 50 g
- Lemon juice 10 g (quarter lemon)
- Zest of half a lemon
I rub the zucchini on a coarse grater.
I mix dry ingredients in a separate container.
I melt the chocolate with butter in a water bath and start kneading the dough.
In a separate container, beat the eggs with sugar until fluffy and lighter. I work with a hand mixer and it took me 3-4 minutes.
Continuing to beat, pour in the melted chocolate and stir until smooth.
I add grated zucchini, kefir, zest and lemon juice and mix with a mixer.
Now it's time for the dry ingredients. I pour them into the liquid mass and mix until combined.
Pour the dough into a mold and send it to bake for 30 minutes at 180 ° C. I check the readiness well, a dry skewer.
When the cake is ready, I take it out of the oven, let it cool slightly and remove it from the mold. Let's show what I did.
The cupcake turned out to be very dense and incredibly chocolatey. Everyone who tried it was very surprised when I said that it included a zucchini.
