I want to share a story about how I was invited to make desserts for a trendy Moscow restaurant.
For the last couple of years I have been focusing on this blog. Well established the workflow: on Saturdays I cook and shoot all the recipes, and on weekdays I write articles and process photos. Everything went like a knurled one until I received a message on Instagram from a stranger.
By the way, subscribe to me on Instagram. In addition to recipes, there is a story where I make express reviews of sweets.
I thought it was just spam and had already blocked the author, but then I decided to read her message. And for good reason.
It turned out that I was offered to develop several desserts for one Moscow restaurant. I can't name it yet, but believe me, you have probably heard the name of the owner of this restaurant.
I met with the manager, we talked, discussed the tasks, and I agreed. Such work is interesting for me, I like to create something new.
They gave me 2 weeks to work on the dessert. There is enough time, but problems started almost immediately. My car broke down, and I spent a huge amount of time and nerves repairing it. Hot water was turned off at home, and the elaboration of new desserts is always mountains of dirty dishes. My son got new teeth, he often slept worse and was more capricious.
All this prevented me from working normally. But I didn't give up.
At first I had a lot of dessert options, but gradually I dropped everything and left only six.
The day before the tasting, the entire city suddenly ran out of green basil, which was an important ingredient. I had to go after him to distant lands and spend precious time. I was in a hurry and was afraid that I would not have time to prepare everything.
I will remember this hectic day for a long time. When I returned home, I was informed that I also needed to prepare a tasting card. I have not done such before and at a cursory glance it seemed not difficult. But how wrong I was.
Towards midnight, I just finished with the desserts and started the map. I sat over her for a couple of hours. It turned out to be really easy to fill in the card, but for this I needed to calculate the cost price. And since I have 6 dessert options, it took a lot of time.
I don't remember what time I went to bed, but in the morning I woke up with a buzzing head. However, a cold shower quickly brought me back to life, for the first time I was glad that there was no hot water at home.
Then there was packing, the way to the restaurant and the arrangement of desserts. I was worried and in a hurry and therefore hardly took pictures.
By the way, I brought the desserts to the restaurant unassembled. So that you can try each component separately.
In the end, the tasting took place and, in my opinion, went well. It is too early to talk about the results, since I do not know them myself yet. I am waiting for a response from the restaurant.
But even if they turned me down, it was a great experience. I love such shakes, thanks to them you gain experience. I'm looking forward to next week.
