When I came across a recipe for this bread, I immediately wanted to make it. I found the recipe in a book by an Irish baker. In his homeland, such bread is the most popular, like our sliced loaf.
Before cooking, I doubted that this bread would look like a yeast loaf familiar to us or a craft bread made with sourdough. But I doubted in vain. The bread turned out to be unusual, but tasty.
In the original, bread is prepared with buttermilk - this is the liquid that remains after whipping cream into butter. We don't sell buttermilk in stores, so I replaced it with fatty kefir. I also added flax seeds. They can be eliminated altogether or replaced with other seeds. Let's cook!
Step-by-step recipe for making bread without yeast and sourdough
- Wheat flour, high quality, 500 g
- Kefir 400 g
- Flax seeds 90 g
- Egg 1 pc
- Butter 20 g (cold)
- Sugar 20 g
- Baking powder 6 g
- Salt 5 g
- Soda 4 g
I mix all the dry ingredients in a bowl. I add the diced cold butter.
Grind the butter and flour mixture until smooth.
In a separate container, I mix kefir with an egg until smooth. I add liquid ingredients to dry ingredients and knead the dough.
On a table covered with flour, I form a bread blank. I transfer it to a baking sheet covered with parchment and leave to rest for 10 minutes.
Before baking, I make cuts with a razor blade. I bake for 15 minutes at 220 ° C, then lower the temperature to 200 ° C and bake for another 30 minutes.
