I show you how to make a universal biscuit from the simplest ingredients. It can also be used for cakes, and just enjoy yourself over a cup of tea.

Whoever baked a biscuit at least once has probably come across the fact that it is often baked unevenly. Most often, a biscuit is made with a bump in the center. This, of course, is not a problem, and the bump can be cut off, but why do this if you can immediately cook without it.

Do you think this is impossible? This is not true. Today I want to share a recipe for a chiffon biscuit, which I always get perfectly smooth. Let's cook!

Step-by-step recipe for how to make a chiffon biscuit

Ingredients per mold 20 cm in diameter:

  • Eggs 4 pcs
  • Sugar 145 g
  • Vanilla sugar 10 g
  • Flour B / S 155 g
  • Starch 25 g
  • Baking powder 7 g
  • Water 50 g (boiling water)
  • Vegetable oil 40 g
  • A pinch of salt

Beat eggs with vanilla and regular sugar and salt until they turn white and increase in volume. I beat in a stand mixer for about 5 minutes. The hand mixer will take longer.

In general, working with a stationary mixer is much more pleasant than a manual one. While the mixer is running, you can do other things instead of standing over it. You often ask the brand of my mixer, I have had a Gorenje kitchen machine for more than 5 years.

When the eggs are beaten, I start adding the dry ingredients in several stages, stirring the mixture with a spatula each time.

The last ones I add to the dough are boiling water and vegetable oil. Stir until smooth.

Pour the dough into a baking dish and send it to an oven preheated to 180 ° C. I check the readiness for a dry toothpick. In my case, the baking time was 35 minutes.

After baking, I let the biscuit cool down a little, remove it from the mold, wrap it in plastic wrap and put it in the refrigerator for 3-4 hours. Why am I doing this, I have already told (you can read this link).

That's it, the biscuit is ready. It turned out, in my opinion, perfect. It does not have a tubercle, it is moist inside and does not require impregnation. And most importantly, it turns out to be smooth and beautiful. Now it remains to cut it into cakes and collect it into a cake.
