Today I will cook the curd pie loved by many. This cake is often called "Royal cheesecake", but we will cook it now in a completely new way!
I'll start by making the dough. The dough will be very unusual, delicious and chocolatey.
I need 70 grams of dark chocolate and 70 grams of butter. I melt them in the microwave, you can also use a water bath.
The chocolate and butter have melted, mix a little and set aside to cool a little.
I add a pinch of salt and 1/2 teaspoon of baking powder to the flour. I stir it.
Pour chocolate into flour and stir with a spatula.
Such a crumb should turn out. I add one egg to the crumb.
I knead the dough very quickly, just to make it all come together in one ball.
I divide the dough into 3 parts, wrap each part in plastic wrap or a bag and send it to the freezer for 20 minutes.
I'm getting down to stuffing.
I have two packs of cottage cheese, 180 g each, pasty cottage cheese. I add 150 grams of sour cream 20% fat to the curd.
I add 100 grams of sugar, 2 eggs and 1 tablespoon of cornstarch. For flavor, I'll add vanillin (or vanilla sugar).
I'll add a little lemon zest.
Mix everything well with a whisk, you can beat with a mixer.
I take out the dough from the freezer and rub it on a coarse grater. I pre-greased the form with butter. The size of the form is 21x15 cm, it is better to take a slightly larger form.
I pour out about half of the curd filling.
I rub the second part of the test.
Pour the remaining curd mass on top.
And on top I rub the last, third part of the dough, after baking this layer will become crispy.
I send it to the oven for 40 minutes at 180 degrees. I check the readiness for a dry toothpick.
I cool the pie, and you can serve it for tea :)
It turns out a very tasty curd cake with a hint of lemon zest and vanilla. With chocolate and crunchy dough on top.
