Profiteroles with red fish, cheese and herbs

Ingredients: eggs, water, flour, butter, salt, sugar, soft cream cheese (you can use curd), slightly salted red fish, dill

Cooking method:

Add salt, sugar, butter to warm boiled water and boil everything. Then add flour to this mass and quickly mix everything thoroughly, leave to simmer for 1-2 minutes, stirring constantly. We leave this dough to pause a little (so that the eggs are not boiled) and then add 2 eggs to it, while mixing thoroughly until the eggs are completely dissolved in the dough.

This is how we introduce all 8 eggs. Stir until our dough becomes viscous. Then cover the baking sheet with parchment and grease with oil. We spread the profiteroles using a pastry syringe, or simply using 2 teaspoons. We put in the oven at 200 C for 30 minutes. Do not open the oven when the profiteroles are baked !!

While they are baking, let's make the filling. Cut the fish into cubes, chop the dill and mix everything with the cheese. When the eclairs are baked, let them cool down.
