Today I am preparing a wonderful dish. A hearty, delicious hot lunch for the whole family.
I'll start with the dough, the dough will be dumplings. Sometimes I do it with an egg, sometimes without an egg. Today there will be an option again without an egg.
I add salt to 400 grams of flour, mix.
I pour in 200 ml of warm water. Gently knead the dough.
Mixed a little, add 2 tablespoons of vegetable oil.
I knead the dough so that it does not stick to my hands. When all the ingredients are collected, I knead the dough for another 5-7 minutes, until elastic and uniform.
I put the dough in a bag to "rest" for about twenty minutes, so it will become even softer, and it will be easier to roll it out.
In the meantime, I'll prepare the filling.
I washed 80 grams of buckwheat well, pour boiling water for 20 minutes so that the buckwheat is steamed.
I cut the onion into thin half rings and send it to the minced meat. I have minced turkey, only 500 gr. Any mince you have will do.
I cut a small bunch of cilantro, you can take parsley, dill. I send the greens to the minced meat.
I check how the buckwheat has steamed. I take a grain, it should be easily flattened with my fingers. I drain the remaining water through a colander and send the buckwheat to the minced meat.
Salt and pepper the filling and add 1 teaspoon of sweet paprika. I mix all the ingredients with my hands in a bowl.
The dough "rested", became completely soft, elastic. Lightly grease the table with vegetable oil and roll the dough with a rolling pin into a small layer. Then I grease the dough with vegetable oil and let it sit for about five minutes to soak the dough (then it will stretch very easily).
After 5 minutes, I stretch the dough with my hands. I got a rectangular layer of dough about 50 * 80 cm.
I cut the dough into squares of about 15 * 15 cm. I lay out the filling in squares. I wrap the dough in tubes.
I fry 2 chopped onions in vegetable oil until light golden.
Add 2 grated carrots and fry for another 3-4 minutes.
I add 1 tablespoon of tomato paste, stir. And add 1 tomato, cut into small cubes.
Salt the vegetables and fry for another minute.
I spread the rolls-pies, grease each layer of pies with vegetable oil so that the tubes do not stick together.
I pour water into the pan, up to about half the height of the tubes. Cover with a lid and cook over low heat for about 35 minutes.
Can be served at the table. A very tasty, juicy and satisfying hot dish. I liked the sour cream serving.
