Today I cook interesting homemade chicken sausages. Juicy, tasty, kids love it!
I take in half, chicken breast 750 gr and chicken thighs 750 gr.
I cut the thighs into large pieces and send them to the combine or meat grinder. I have separated the skin and will not use it, but I will leave the fat. Grind the thighs so that you get minced meat with small pieces. If you scroll into a meat grinder, then it is better to do this once and through the largest grate.
I also cut the chicken breast into small pieces and send it to a food processor or meat grinder. But I grind the breast to the state of the pate. In a food processor, I do this for a longer time, and if through a meat grinder, then it is better to rotate the breast 2-3 times.
I pour 100 ml of cold milk or cream into a homogeneous minced chicken breast and mix thoroughly again with a processor.
I put both minced meat in a large bowl and add salt. I add salt based on 1 kg of finished minced meat, one teaspoon with a small top of salt.
I add a little black pepper and 4 cloves of garlic squeezed through a press. I knead the minced meat well with my hands.
Minced meat is ready. I divided it into about three parts.
Now I will make natural dyes for sausages.
I grated one raw medium beet on a fine grater, squeeze the beet juice through a sieve.
For the green dye, I used defrosted spinach. I grind the spinach with a blender and squeeze the juice through a sieve.
I add beet juice to the minced meat and some sweet paprika. I knead the minced meat.
Pour the green dye into the second bowl of minced meat. I knead.
And in the third bowl with minced meat I add turmeric and mustard powder.
I use cling film to form sausages. If you have sausage casings, use them.
I wrap the minced meat in foil, grab it by the tails and roll it harder. It remains to tie these tails in knots.
In total, I got 18.5 sausages))) I will boil some, and I will freeze some.
I cook sausages for 15-20 minutes on low heat. The water should not start to boil. In fact, sausages are cooked as if steamed.
The sausages are ready, and I will fry them in a grill pan for beauty. First, remove the film casing from the sausages.
