Today I'm making a delicious sour cream pie. With an unusual filling, amazingly tasty and aromatic. With a crispy shortbread crust.
I'll start by making the simplest and most delicious shortcrust pastry.
I add a pinch of salt and 80 g of sugar to 260 g of flour.
I add a full teaspoon of baking powder. I mix everything well.
And now I add butter to the flour, only 100 gr. I just took the butter out of the fridge and diced it.
With my hands I grind the flour and butter into crumbs.
Last but not least, I add 1 chicken egg.
And a tablespoon of sour cream.
I quickly knead the dough, this is how it should turn out in the end. Soft and very pleasant.
I transfer the dough into a mold with a diameter of 24 cm, pre-covered the bottom with baking paper. I distribute it with my hands over the entire shape and form a side.
I'll put the base in the refrigerator for now.
To 300 grams of sour cream I add 100 grams of sugar, 1/3 teaspoon of vanillin.
I add 2 eggs and 2 tablespoons of cornstarch. I mix everything well with a whisk.
I send 150 grams of soft prunes and 100 grams of walnuts to the blender bowl. I grind everything well with a blender into a thick mass.
The mass is well molded and keeps its shape. I sculpt balls with my hands.
I spread the balls on the dough and fill the form with sour cream and vanilla filling.
I send it to the oven preheated to 180 degrees for 40-45 minutes.
Let it cool down a bit and take it out of the mold. Let the pie cool completely before serving.
The pie turned out to be very tasty, tender, with a vanilla aroma. The perfect combination of prunes, walnuts and sour cream. All this is complemented by a crispy crumbly crust of the dough. Try to cook!
