At the height of summer, you can enjoy a fragrant dish with a spicy taste - juicy caviar from zucchini and eggplant. This vegetable appetizer will appeal to any adult if served with a meat dish, a side dish, or as a stand-alone dish with slices of bread or biscuit biscuits.
Caviar is prepared literally for 20-25 minutes, provided all the necessary ingredients are available. It can be pureed with a hand blender or chopped in the bowl of a food processor, if desired. Garlic is added to the appetizer either fresh or dried, but at the very end, so that its aroma is preserved and becomes the main thing in the dish.
Ingredients:
Eggplant - 3 pcs.
Zucchini - 2 pcs.
Onions - 1 pc.
Tomatoes - 3 pcs.
Vegetable oil - 50 ml
Salt and pepper to taste
Garlic - 3 cloves
Preparation:
1. Immediately pour boiling water over the tomatoes, placing them in a deep container. Remove the peel from eggplants and zucchini with a vegetable peeler, rinse the fruits in water. If they are blue with bitter flesh, then pour salted hot water over them and leave for 15 minutes, placing them in a deep bowl or small basin.
2. Peel the onion, rinse and cut into half rings. Warm vegetable oil in a saucepan or cauldron and put onion slices into it. Fry until soft, about 1-2 minutes on medium heat.
3. Move the tomatoes into cold water, peel, lightly crush the flesh with a fork.
4. Put the tomato pulp in a saucepan with the onion and simmer for about 2-3 minutes, until the vegetable mass changes its color. Instead of fresh tomatoes, it is permissible to use frozen, tomato paste.
5. Cut the peeled eggplants and zucchini into plates, then into small cubes.
6. Send both cuts to a saucepan with tomato paste, add salt and ground black pepper. If the tomatoes are not juicy, but fleshy, then add about 80-100 ml of hot water to the container.
7. Stir gently, cover the container with a lid and simmer on medium heat for about 20-25 minutes until soft. Remember that the larger the slices, the more time it takes to cook. 5 minutes before the end of stewing, chop the peeled and washed cloves of garlic with a knife or pass through a special fine press, add to the container. Taste the caviar and add more spices if necessary.
Put the prepared dish on plates or bowls, serve to the table, not forgetting about slices of bread, mayonnaise, sour cream, etc. This vegetable snack is delicious both warm and cold.
