Meat with vegetables in the oven is tasty, satisfying, nutritious. I love this dish very much for the simplicity of its preparation, and for the fact that the result is a full lunch or even dinner.

Pork with vegetables turns out to be special, every vegetable piece of the dish is soaked in meat juice, believe me, it's incredible. As for the spices, I suggest leaving them aside so as not to interrupt the taste and aroma of meat and vegetables themselves. The only point is that adding young garlic will not be superfluous.

You can always use any vegetables that are available to you at the moment; in winter, harvesting them from the freezer will come in handy. Well, the option is quite attractive, so let's hurry to the kitchen!

Ingredients:

Pork - 300 g

Potatoes - 2 pcs.

Eggplant - 1 pc.

Zucchini - 1 pc.

Carrots - 1 pc.

Bulb onions - 1 pc.

Garlic - 2-3 cloves

Salt, pepper - to taste

Vegetable oil - 1 tbsp.

Process description:

1. Prepare all the required ingredients according to the list. You can choose fatter pork, or, on the contrary, use the lean part. This time I came across a good neck, it will perfectly saturate the vegetables with its juice, since there is a little fat in it.

2. Eggplant can be pre-fried, in fact, like all other vegetables and meat - this way you get a more satisfying and fatty version of the dish, but very tasty. Today I propose to limit ourselves exclusively to baking. Wash and dry the blue, cut into cubes. If bitter, sprinkle with salt and leave for 15 minutes, then rinse and dry.

3. Wash and dry the zucchini, it is advisable to use not late fruits, but young ones. Cut into small cubes as in blue. You can add bell peppers, green beans, tomatoes, or whatever your heart desires.

4. Put the vegetables in a deep bowl, add some potatoes there, cutting them into cubes. Peel the carrots and onions, rinse and cut into small pieces. Also add to the bowl along with a couple of garlic cloves, peeled and crushed with a knife.

5. Rinse the meat and wipe dry, chop and add to the vegetables. Season all ingredients only with salt and ground black pepper, if desired, you can add some spices. Mix.

6. Preheat the oven to 180 degrees, grease the mold with oil and transfer the prepared ingredients into it. Bake sealed vegetables and meat for 40 minutes.

7. Arrange on plates and serve.
