Delicious and incredibly flavored chicken curry with rice is ideal for a festive dinner, although it can be cooked for a regular meal.

Perhaps not everyone knows that Indian curry is a gravy that contains over 30 spices. To save money, you can buy a curry spice mix.

When choosing meat for a recipe, give preference to homemade meat. You can buy it in the market or in specialized stores.

Any rice will do. For example, wild or red will add color to the finished dish, you can even combine several types.

Ingredients:

Chicken fillet - 600 gr.

Rice - 1 glass

Onions - 1 pc.

Carrots - 1 pc.

Tomatoes - 200 gr.

Parsley - bunch

Vegetable oil - 35 ml

Curry spice - 2 tsp l.

Salt, pepper, spices - to taste

Preparation:

1. Prepare all the required ingredients according to the list.

2. Peel the chicken fillet from veins, films, excess fat and cut into medium pieces. Transfer the meat to a preheated skillet with vegetable oil, add salt, black pepper and spices to taste. Mustard or olive oil can be substituted for vegetable oil.

3. Fry the fillets for 5-7 minutes over medium heat, uncovered. Peel the carrots and cut into cubes. If it is young, then you do not need to cut the peel. Peel the onions and cut into random pieces. You can replace onions with green onions using only the white part without feathers. Add carrots, onions and spices to the meat to taste.

4. Fry the meat with vegetables for 5 minutes on low heat, stirring occasionally. Then add the curry spice mixture, turmeric and salt to taste.

5. Stir well and cook for another 2-3 minutes over low heat. Then cover and let sit for a few minutes.

6. Pour the rice groats into a saucepan with a thick bottom and pour boiling water in a 1: 2 ratio, so it will turn out crumbly and cook faster. Then rinse under running water, add salt and stir. You can add butter at this stage if you like.

7. Cut the tomatoes into medium slices and transfer to a bowl. For the recipe, you can use yellow or purple tomatoes, as they perfectly diversify the dish. Chop the parsley and add with black pepper to the tomatoes. You can replace it with cilantro, dill or basil.

8. Stir well and place cooked rice in bowls, top with tomatoes with herbs and chicken curry and serve.

Sprinkle with green onions before serving, if desired.

For sauces, place soy, tomato or sour cream next to the dish.
