Appetizing stuffed potatoes with minced meat are perfect for a hearty lunch. It is prepared both on weekdays and on holidays. You can even take such a dish with you for a snack to study, work or a picnic.
When choosing meat for a recipe, give preference to homemade meat. It is not necessary to stuff the potatoes with pork; you can take chicken, beef, lamb or rabbit.
Mushrooms are best served fresh rather than canned.
Ingredients:
Potatoes - 6 pcs.
Pork - 250 gr.
Champignons - 200 gr.
Onions - 1 pc.
Cheese - 150 gr.
Sour cream 20% - 5 tbsp. l.
Garlic - 3 cloves
Vegetable oil - 30 ml
Salt, black pepper, spices - to taste
Preparation:
1. Prepare all the required ingredients according to the list.
2. Wash the potatoes under running water and dry. Grease a baking dish with a thin layer of vegetable oil, put the potatoes smeared with garlic into it. Put in an oven preheated to 180 degrees for 50 minutes.
3. At this time, do the stuffing. Peel the pork from veins, films and excess fat, if any. Next, grind into minced meat using a meat grinder or food processor. Peel the mushrooms and cut into small pieces. You can replace them with porcini mushrooms or chanterelles. Transfer everything to a hot skillet with vegetable oil (you can substitute olive, sesame, or mustard oil) and add salt. Remember, mushrooms absorb a lot of salt.
4. Fry the mushrooms with pork for 5 minutes over medium heat, stirring occasionally. Peel the onions, cut into arbitrary pieces and add together with spices, salt, black pepper to the minced meat.
5. Transfer the cooked meat with vegetables to a deep bowl, add finely chopped garlic and cheese, grated on a fine grater, and spices to taste. Russian hard cheese can be replaced with feta cheese, feta or parmesan cheese.
6. Add sour cream (or cream / Greek yogurt) and stir until smooth.
7. After the time has passed, remove the potatoes from the oven and leave to cool for a few minutes. Next, cut off the top and remove the middle with a small spoon. You do not need to peel the root vegetables. Fill the potatoes with the filling, sprinkle with grated cheese and place in a mold. Place in a preheated oven to 190 degrees for 25-30 minutes.
8. Transfer the prepared stuffed potatoes to plates and serve to the guests. Sprinkle with parsley, cilantro, or green onions before serving, if desired.
