Stewed beets with carrots and onions

Vegetable mixture of beets, carrots and onions stewed in tomato juice or sauce is the main dressing for red borscht and beetroot, a full-fledged side dish for hunting sausages and all kinds of smoked meats, as well as an independent version of lean snacks.

If the beets are not too juicy and sweet, add a large pinch of granulated sugar when cooking - the roots will caramelize and get a richer taste.

Ingredients:

Beets - 2 pcs.

Onions - 1 pc.

Carrots - 1 pc.

Tomato juice - 150 ml

Vegetable oil - 30 ml

Garlic - 1 tooth

Salt, black pepper, dried basil - to taste

Step by step recipe:

Step 1 - To cook beets, stew with carrots and onions, at home, take the products from the list. The ratio of vegetables can be changed at will - as a rule, they adhere to equal proportions by weight. Use dried, smoked, fresh herbs of your choice as flavor enhancers. For the appetizer to turn out to whet your appetite, increase the presence of garlic, add cayenne or other pungent peppers. Tomato juice can be replaced with tomato paste diluted in water, tomatoes in their own juice or some kind of tomato sauce.

Step 2 - In a spacious skillet with a rim or in a saucepan, heat the lean refined oil and first fry the chopped onion - do not dry it out, do not let it burn, bring to transparency, keeping the density and juiciness. At this point, toss in some salt for caramelization (possibly with sugar).

Step 3 - Add carrot slices to the oiled and steamed onions, stir and continue to sauté for the next 2-3 minutes. Chop all vegetables in a way convenient for you - cut into cubes, strips, sticks or rub with shavings.

Step 4 - Throw the beets last, stir, fry for a minute or two.

Step 5 - Pour in tomato juice (water, broth, other liquid), boil. After reducing the heat, simmer under the lid for about 20-30 minutes. Taste vegetables for softness. Add liquid as needed.

Step 6 - At the very end of the process, season the dish with the missing salt, black pepper, allspice dry basil and chopped garlic. Remove from heat and keep covered for a while to mix scents.

Step 7 - Serve the beets, stewed with carrots and onions, as a warm side dish or as a chilled snack, for example, on a slice of bread on fast days.
