Tortilla with chicken and vegetables

Tortilla with various fillings is one of the most popular fast foods in the world. It is prepared and served not only in bistros and street restaurants; you can buy a tortilla from any food truck along the street. I think I won't surprise you if I say that this is one of the favorite hot snacks in my family, so I have to cook it quite often. Today I will show you the simplest and tastiest version of a tortilla - with chicken and vegetables.

Ingredients:

Tortilla - 320 g

Chicken leg - 400 g

Bulgarian pepper - 1 pc.

Garlic - 1 clove

Tomato - 1 pc.

Champignons - 6 pcs.

Hot pepper - to taste

Salt to taste

Ground black pepper - to taste

Parsley (or cilantro) - 5 sprigs

Olive oil - 1 tablespoon

Hard cheese - 150 g

Preparation:

1. Prepare all the foods on the list. The chicken leg must first be boiled until tender and cooled: to do this, remove the skin from it, put it in boiling salted water and boil for 20-25 minutes - the meat should easily separate from the bones. Wash the vegetables under running water and dry. Grate the cheese on a coarse grater.

2. Heat the olive oil in a frying pan, put the peeled mushrooms cut into thin slices, fry them for 3 minutes.

3. Peel the bell pepper from seeds and stalks, cut into small cubes, add to the mushrooms and cook for another 3 minutes.

4. Cut the garlic and hot pepper into thin slices. Peel the tomatoes from seeds, cut the pulp into small cubes. Add everything to the skillet with the rest of the vegetables. Fry over medium heat for 2-3 minutes.

5. Remove the chicken from the bones, cut into small cubes, place in the pan, season with salt and pepper to taste.

6. Add chopped fresh herbs last to the filling. Mix everything and let the contents of the pan cool to a warm state.

7. Put the tortilla on a flat surface, put the prepared and cooled filling of chicken and vegetables on one half, sprinkle generously with hard cheese.

8. Close the filling with the free half of the tortilla, put it on a hot frying pan and grill for 2 minutes on each side - the cheese should melt well.

9. We cut each flatbread into two convenient halves and serve with our favorite tomato sauce.
