For vegetarians, potatoes with broccoli are an independent, full-fledged dish, and for the rest - a delicious side dish for meat and fish. Since potato tubers are much harder than cabbage buds and take longer to bake, I recommend cutting them into small cubes of the same size. Then the potatoes will be evenly saturated with oil, steam and, as a result, will resemble a yam-harru (spicy potato in Lebanese).
Ingredients:
Potatoes - 800 g
Broccoli - 200 g
Rosemary - 1 branch
Vegetable oil - 50 ml
Garlic - 4 teeth
Salt, hot pepper, smoked coriander - to taste
Greens - for serving
Step by step recipe:
Step 1 - Take the groceries on the list. If your task is to keep the cabbage density "al dente" and bright green color, then just boil the inflorescences in salted boiling water for 3-5 minutes, cool sharply with ice or ice water - at the very end, when the potatoes are baked completely, that is, before serving the vegetables mix. My recipe is for those who, to the detriment of the color and firmness of broccoli, want to get thoroughly soft vegetables and not bother with a separate blanching.
Step 2 - Preheat the oven to maximum. Cut the peeled potato tubers into medium-sized cubes. Pour with vegetable oil (any refined oil), mix with ground smoked coriander, salt, pepper. Season each bite evenly. May be supplemented with cumin, turmeric.
Step 3 - Cover the spacious form with foil, pour the potatoes with oil and spices inside. We distribute evenly over the entire area. Scatter the crushed garlic and add a branch of fragrant rosemary.
Step 4 - Cover with foil on top, bend the joints for some sealing and better steaming, send them to the oven, which is hot by that time. Cooking for about half an hour without cabbage. We check for softness by piercing the potatoes with a skewer.
Step 5 - Throw away the rosemary branch that has given its aroma. To the already quite edible potatoes, add broccoli disassembled into inflorescences. Also spread evenly with the top layer, sprinkle with oil and cover with a sheet of foil. We return to the oven for the last 10-15 minutes.
Step 6 - Serve baked potatoes with broccoli, garnish with fresh herbs.
