This shish kebab can be cooked on an open fire, grill, barbecue. But if required under the conditions of an ordinary kitchen, then it will come out appetizing, juicy and fleshy in the oven. Meat for minced meat is very different, your favorite. I recommend mixing, for example, more fatty and tender pork with beef or lamb, expressive in smell, in equal proportions. A delicate and versatile option is minced poultry fillet.

To prevent minced meat kebabs from turning into cutlets, do not add flour, bread, potatoes, starch, etc. products. Experiment with spices, add rich spices, hot peppers - what brings them closer to kebab, Middle Eastern meat dishes.

Ingredients:

Minced meat - 700 g

Green onions - 2 pcs.

Hot pepper - 1/3 pcs.

Smoked coriander - 0.5 tsp l.

Tomatoes - 3 pcs.

Vegetable oil - 50 ml

Salt, black pepper - to taste

Step by step recipe:

Step 1 - Take the groceries on the list. Smoked coriander has a bright, expressive aroma and is ideal for such meat products. Don't like it - replace or exclude. It is preferable to bake a kebab from fresh minced meat, of which you are sure of. But if necessary, pre-defrost, if necessary, pass the pieces of meat through a meat grinder.

Step 2 - Add a large pinch of salt to the minced meat, finely chopped green onion feathers (you can use cilantro), a portion of spicy-appetizing smoked coriander (ground) and chopped garlic. I advise you to chop the garlic cloves with a knife. Push through the press if desired.

Step 3 - Mix all the components. We beat off, increasing the plasticity of the fibers. Throw the meatball from a certain height onto the countertop (in a food bag) several times. Or forcefully toss from palm to palm. They do the same for shaping a kebab - the broken mass is plastic, smooth, easy to mold and does not disintegrate.

Step 4 - Generously cover the sheet of foil with lean refined (so as not to smoke) butter. We lay the blanks on top. With oiled hands we sculpt a tamped oblong bar and string it lengthwise onto a skewer, oiled. A kebab is made large, long or from several short pieces.

Step 5 - Add small tomatoes or any other vegetables of your choice for variety. We send it to a hot oven on a pallet / baking sheet and keep it for about 20 minutes at a temperature of 200 degrees.

Step 6 - Serve the minced meat skewers hot with fresh vegetables and sauces.
