Chickpea and Chicken Soup is very light yet satisfying at the same time. Suitable for those who follow a healthy diet. Oriental notes are given to it not only by the chickpea itself or, as it is also called, by the chickpeas, but also by the spices. Preparing such a soup is not difficult at all, you just need to soak the chickpeas in advance. Coriander can be substituted for ground cumin (cumin), turmeric, or curry.
Ingredients:
Chicken - ½ carcass
Water - 1.7 l
Chickpeas (chickpeas) - 1 glass
Potatoes - 600 g
Carrots - 1 pc.
Bulb onions - ½ pc.
Coriander - ½ tsp
Sweet pepper - 1 pc.
Garlic - 2 cloves
Vegetable oil - 40 ml
Greens (parsley, dill or cilantro) - ½ bunch
Salt, ground black pepper - to taste
Step by step recipe:
Step 1 - Prepare foods from the list.
Step 2 - Soak the chickpeas in cold water. We leave for 10-12 hours.
Step 3 - We wash it, fill it with a liter of water, send it to the stove. Cook from the moment of boiling for 40 minutes over low heat.
Step 4 - Cut the chicken into smaller pieces so that it is convenient to boil.
Step 5 - Transfer the chicken to a saucepan, fill with water and bring to a boil. Drain the first broth, pour in again and bring to a boil again.
Step 6 - Cook over low heat for 20 minutes.
Step 7 - Then we take out the meat, and filter the broth and send it to the fire. When the chicken has cooled slightly, remove the meat from the bones.
Step 8 - Cut the peeled potatoes into small pieces and put them in the boiled broth. From now on, the soup will only cook for 20 minutes.
Step 9 - Finely chop the onion and garlic, pepper into larger pieces, three carrots on a grater.
Step 10 - Heat vegetable oil in a pan. Fry vegetables, stirring occasionally, and at the end of sautéing add coriander, just before that we grind it into powder.
Step 11 - 10 minutes before the soup is ready, lay the meat and chickpeas.
Step 12 - Also add the vegetable fry. Salt and pepper to taste.
Step 13 When serving, sprinkle with herbs.
Step 14 - The soup with chickpeas and chicken is ready.
