Soft, flexible pancakes with stewed apples are a great breakfast or addition to dinner or tea during the day. After filling with the filling, roll the pancakes into tubes, triangles or envelopes, and before serving, if desired, fry them in butter. Serve them with sour cream, honey, or powdered sugar.

Ingredients:

Dough:

Milk - 600 ml

Flour - 200 g

Eggs - 2 pcs.

Sugar - 40 g

Salt - 3 g

Vegetable oil - 40 ml

Filling:

Apples - 500 g

Sugar - 30 g

Cinnamon - 5 g

Butter - 40 g

Step by step recipe:

Step 1 - To make apple-stuffed thin pancakes at home, take the foods listed. Flour - wheat, premium. Choose sweet and sour apples for the filling, strong, you can mix with pears, quince, raisins, poppy seeds. Peel them.

Step 2 - First, knead the pancake dough with milk. Beat eggs and granulated sugar with a pinch of salt in a large bowl until foamy. If you like it sweeter, add another spoonful of sugar. Can also be flavored with vanilla.

Step 3 - Pour in about 100-150 ml of milk and add the whole portion of flour. Stir, remove lumps and first get a dense, very thick dough. That is, first of all, we knead the thick dough, and then the liquid pancake. In this sequence, it is easy to knead without lumps, smooth and uniform dough for thin pancakes.

Step 4 - Having achieved uniformity, pour in the remaining milk and, continuing to work with a whisk, dilute to the desired consistency.

Step 5 - Lastly add lean refined oil (sunflower or corn oil), shake it once more. Pancake dough at hand. You can knead it in the evening, put it in the refrigerator under a film / lid and bake pancakes the next morning or afternoon.

Step 6 - Preheat a frying pan (22 cm in diameter), coat the first time with fat (lard or vegetable oil, but thinly), pour out a portion of the dough - turn the container, fill the entire surface with the dough and bake a pancake with two parties. If you want soft edges, stack hot pancakes and cover immediately.

Step 7 - Cut the peeled apples into small cubes, sprinkle with sugar and ground cinnamon and, along with a piece of butter, send them to the fire. Sometimes we stir and simmer for 10 minutes. Cool it down.

Step 8 - The preparatory phase is over. Now we spread the cooled apple filling on each pancake, roll it up.

Step 9 - Serve warm apple and cinnamon pancakes.
