If you are going to cook aromatic and juicy live jam without heat treatment in the summer season, opt for strawberries grated with sugar. At least one sweet tooth is unlikely to refuse such a dessert! In addition to its bright taste, the delicacy is extremely useful, because it almost completely retains vitamins and microelements, even with prolonged storage.

One drawback - such a workpiece very often deteriorates quickly. It depends on the quality of granulated sugar - recently it has been mixed with some additives and jam, even in a ratio of 1 part strawberries to 2 parts sugar, begins to ferment literally through day. To prevent this from happening, buy sugar a little more expensive, packaged in bags.

From the specified amount of strawberries and sugar, 3 containers of 0.25 l of jam are obtained. By the way, if the berries are too juicy, it is best to use 1 part to 2 parts sugar.

Ingredients:

Strawberry - 0.5 kg

Sugar - 0.5 kg

Preparation:

1. When buying, select ripe and juicy strawberries, not damaged, with a bright smelling smell. If there is no aroma, then it is best not to purchase such a product - strawberries are most likely grown in hotbeds or greenhouses and are not suitable for harvesting.

2. Remove the tails from the berries, pour them into a bowl and cover with cold water. Rinse each strawberry, then blot with a paper towel, removing excess moisture that is completely useless.

3. Pour the dried berries into the bowl of a blender or chopper. If you don't have equipment on hand, you can use a regular boiled potato press or fork, but you should consider protecting everything from the colorful splashes.

4. Grind the berries for 2-3 minutes, turning them into a puree. It is undesirable to puree more in the bowl of the technique, so as not to chop the bones. But when rubbing with a fork, the time will have to be increased to 5-7 minutes so that there are no large pieces left in the mass.

5. Pour the finished strawberry puree into a deep container and cover with granulated sugar, leaving about 3-4 tbsp. l. free-flowing ingredient to create a "plug". Mix thoroughly, trying to completely dissolve the sweet product in the aromatic mass.

6. Pour the "live" strawberry jam into clean, dry containers almost to the top.

7. Pour 1 tablespoon into each jar. granulated sugar, so that it seems to seal the jam from the air, creating a cork. Immediately screw the container back on with clean, dry caps or cover with nylon caps.

8. Store the treat in the refrigerator or basement / cellar at a temperature not exceeding 15 degrees.

With this jam, you can prepare teas and fruit drinks, various pastries, jellies, soufflés and other desserts. You can even just serve it with tea or coffee, especially in the cold winter.
