Dumplings with potatoes, smoked breast and onions

In addition to traditional meat dumplings, dumplings are filled with different fillings and, in my opinion, one of the most satisfying and tasty - potatoes, fried onions and smoked chicken breast. Formed semi-finished products with potatoes can be frozen, and boiled and consumed as needed.

Ingredients:

Dough (for dumplings and dumplings in milk) - 300 g

Potatoes - 500 g

Smoked chicken breast - 150 g

Onions - 1 pc.

Vegetable oil - 30 ml

Salt, black pepper - to taste

Step by step recipe:

Step 1 - To make dumplings with potatoes at home, take the foods on the list. I recommend the milk dough recipe. Delicious, soft in texture, elastic, thinly rolled without breaks - with it dumplings, manti and dumplings retain their shape and do not boil over.

Step 2 - Wash potato tubers, remove soil residues and immerse them in actively boiling water. Boil the potatoes in their skins without spices until soft. We clean and knead in mashed potatoes. Cooked in this way and mashed potatoes are not watery, dense and plastic.

Step 3 - In a hot frying pan, heat the lean refined oil, put the finely chopped onion first. Saute until transparent and add diced smoked chicken breast or other similar aromatic meat. Fry for 5-7 minutes over low heat.

Step 4 - Mix mashed potatoes with fried onions and chicken, salt and pepper. We will definitely try. The filling for the dumplings must be completely cooled, otherwise the dough / flour base will creep.

Step 5 - The dumplings can be sculpted by cutting the mugs out of the rolled flat cake with a shot glass. If you have a grate for forming dumplings in the bins, use it. We roll out a thin layer, put it on a metal fixture with holes.

Step 6 - Lay out the mashed potato filling.

Step 7 - Cover with the second cake.

Step 8 - We roll on top with a rolling pin, thereby glue the joints of two cakes and cut the boundaries between the products. We shake the dumplings out of the cells, let the dough trimming run in the second circle.

Step 9 - At this stage, semi-finished products can be frozen, laid out in one layer on a board, after hardening, packed in a bag or container.

Step 10 - Boil dumplings with potatoes, onions and smoked chicken in salted boiling water with bay leaves for more aroma: after surfacing in 3-5 minutes, discard in a colander.

Step 11 - Serve dumplings with potatoes, sprinkle with butter and pepper, ideally with sauce and herbs.
