Thin pancakes on kefir with boiling water

Choux pastry pancakes are combined with any filling, different sauces and are delicious on their own, empty, for example, instead of bread with soups. The texture is soft, oiled and very delicate. They have a light aroma of a fermented milk base. If desired, you can add ground spices, hot spices.

Ingredients:

Kefir - 1 tbsp.

Boiling water - 1 tbsp.

Flour - 1 tbsp.

Eggs - 2 pcs.

Sugar - 1 tbsp. l.

Soda - 0.25 tsp l.

Vegetable oil - 2 tbsp. l.

Salt - a pinch

Step by step recipe:

Step 1 - To bake thin pancakes on kefir with boiling water at home, take the products on the list. The volume of the glass is 220 ml, the diameter of the pan is 22 cm. The dough is kneaded quickly and without problems, even with a hand whisk. Remember the sequence of bookings of products and adhere to the indicated proportions. If possible, entrust the kneading to a kitchen unit / mixer - while the pan is warming up over the fire, the dough with boiling water and kefir will be ready in a couple of minutes.

Step 2 - So, beat the eggs and granulated sugar first. For sweet pancakes, vanilla sugar and cinnamon are immediately introduced. Let the egg whites fully combine with the yolks, while dissolving the sugar.

Step 3 - Shake room temperature kefir and a portion of soda in a glass. Stir easily and pour immediately to the egg-sugar mixture. We continue intensive circular movements. After introducing a new product, stir each time until smooth.

Step 4 - Now add the measured wheat flour, throw in a pinch of salt to enhance the taste. We remove all dry "islands", lumps. Again we achieve a uniform consistency.

Step 5 - After adding flour, pour in vegetable oil of any kind, preferably refined oil without a strong odor. Stir again.

Step 6 - Add boiling water last, whisking continuously, dilute to a more liquid state. Do not forget to save the required amount of boiled water at this point.

Step 7 - Grease the hot frying pan for the first time with vegetable oil or a piece of bacon, pour out the pancake dough and dry the pancake from below, then turn it over and blush from the back. We fold delicious openwork pancakes in a convenient way.

We serve homemade custard pancakes warm, chilled or reheated.
