Oven pumpkin chicken or turkey is a traditional American Thanksgiving meal. The meat is baked along with vegetables, so the side dish and the chicken itself are very tasty. To make the garnish juicier, buy a ripe pumpkin, the pulp should be bright orange. You can also add other vegetables: broccoli, cauliflower, bell peppers, green peas, zucchini.
Ingredients:
Chicken - 1 pc.
Pumpkin - 400 gr.
Bulb onions - 2 pcs.
Garlic - 3 bbc.
Rosemary - 2 Wh
Honey - 2 tsp
Vegetable oil - 100 ml.
Seasoning for chicken - 1 tsp
Salt to taste
Step by step recipe:
Step 1 - Prepare products according to the list. The weight of the chicken can vary, I have 1.3 kg. For baking, not only the whole carcass is suitable, but also its parts. You can take an ordinary onion, but with purple it comes out much more beautiful and elegant for the festive table.
Step 2 - First prepare the marinade: in a bowl, mix vegetable oil, honey, salt and spices (I took a pinch of dried basil, paprika, as well as caraway seeds and a little black pepper). It is better to preheat honey so that all components of the marinade become good friends with each other.
Step 3 - Check the carcass for feathers, which we remove, then rinse the chicken and dry it with a paper towel. Grease liberally with marinade, both from the outside from all sides and from the inside. We do not use all the marinade, we leave 1/3 for vegetables.
Step 4 - Peel the garlic cloves, grind on a medium grater. Rub the carcass with chopped garlic and sprinkle with fresh rosemary. Leave to marinate for 1 hour.
Step 5 - When the chicken has already been marinated, we proceed to the preparation of vegetables. Cut the peeled pumpkin and onion into large slices.
Step 6 - Transfer the slices to a bowl, pour over the marinade and stir with your hands.
Step 7 - Place the chicken carcass at the bottom of the heat-resistant form, place the pumpkin and onion around the edges. We tie the chicken legs together with threads, and attach the wings to the breast with the help of toothpicks.
Step 8 - We tighten the form with foil so that the chicken does not start to burn earlier than it should, but is baked well inside first.
Step 9 - Preheat the oven to 190 degrees and bake the meat with vegetables in the top and bottom heating mode, first in foil for 40 minutes, then remove it and bake the chicken until golden brown. After the foil has been removed, it is necessary to water the chicken carcass with marinade every 10-15 minutes, which has combined with its juice during baking. The turkey, depending on its size, is kept in the oven for 2.5-4 hours, the pumpkin is added to it 2 hours after the start of baking.
We transfer our chicken with pumpkin to a serving dish and serve.
