Olivier salad with chicken

Is there still such a well-known to everyone and everyone's favorite winter salad as Olivier? It is prepared not only for the New Year's table, but also for other festive feasts. There are a lot of cooking options: with meat, and with shrimps, and with sausage. Today we will cook the most common option - with boiled chicken. Boiled chicken fillet can be replaced with smoked one, but for freshness I recommend adding a little fresh cucumber.

Ingredients:

Potatoes - 4 pcs.

Chicken fillet - 200 gr.

Chicken egg - 4 pcs.

Carrots - 2 pcs.

Canned green peas - 1 bnk.

Fresh cucumbers - 1 pc.

Pickled cucumbers - 2 pcs.

Ground black pepper - 0.2 tsp

Salt and mayonnaise to taste

Step by step recipe:

Step 1 - We prepare the necessary products according to the list.

Step 2 - Wash the chicken fillet, fill it with water and bring to a boil. Cook over medium heat for 20 minutes in salted water, then remove the meat on a plate and let it cool.

Step 3 - Wash hen eggs thoroughly. We put it in cold water, send it to the stove and cook from the moment it boils for 10 minutes. After we take it out, fill it with cold water, so that later it would be easier to clean it from the shell.

Step 4 - While the chicken and eggs are cooking, put the vegetables on the stove. Wash carrots and potatoes well, fill with water. Cook from the moment of boiling for 20 minutes. Then we take it out on a plate, let it cool.

Step 5 - Peel the eggs. Cut into cubes. Put the eggs and then all the ingredients of the salad in a small bowl or saucepan.

Step 6 - Cut the pickled cucumbers first into slices, then into strips and then into cubes.

Step 7 - First cut the cooled chicken fillet lengthwise into slices, then into cubes or pieces.

Step 8 - Peel the cooled potato tubers and carrots. We also cut them into cubes and send them to the rest of the ingredients.

Step 9 - Drain the liquid from the canned peas, send them to the salad.

Step 10 - Three on a medium grater a little fresh cucumber. Salt and pepper the dish to taste, mix. We send the refrigerator for a couple of hours.

Step 11 - Fill the salad with mayonnaise and put it in a common salad bowl or in portions on plates. If you don't have a serving ring, you can lay out the dish using a cut 1.5 liter plastic bottle.

When serving salad "Olivier" with chicken, sprinkle with finely chopped fresh dill or parsley.
