There is probably no simpler and more delicious Russian dish than potatoes with herring. Such a lunch or dinner can often be found not only on weekdays, but also on holidays. The dish is prepared literally in half an hour, and ready-made herring is purchased at any convenience store or supermarket. Of course, you can salt such delicious fish yourself at home, but you need to do this in advance, about 3 days before preparing and serving the dish on the table.
Do not forget to complement the potatoes with herring with pickled red onions, fresh herbs and various spices, and also serve a glass of chilled red wine or a glass of white with the dish.
Ingredients:
Potatoes - 5 pcs. (average)
Herring fillet - 2 pcs. (large)
Bay leaf - 2 pcs.
Salt and pepper to taste
Red onions and herbs for serving
How to cook:
1. Since the potatoes are served in their skins, rinse the tubers with the hard side of a sponge under running water to remove all dirt and dust. Thoroughly clean the grooves in the root vegetables to make them as clean as possible, rinse again. Put the tubers in a cauldron or stewpan, chop each of them several times in different places with a knife so that none of them burst during cooking - only whole boiled potatoes are needed. By the way, when purchasing a product, choose those varieties that go for cooking, and not for frying. Add a couple of bay leaves to the saucepan, about 0.5 tsp. salt and pour warm water, not adding slightly to the edges of the container, so that it does not splash out during boiling.
2. Place on the stove and after boiling, cook for 30 minutes on medium heat until the roots are tender. You can check with a knife or a long skewer. If, when piercing, the knife / skewer easily comes out of the potato, then it is already cooked.
3. Remove the boiled tubers from the container and let them cool slightly. Then cut horizontally and place on a plate or dish.
4. Cut the herring fillet into slices and put on the boiled potato halves. If you wish, you can cut the fish into ribbons and twist roses from them - do not limit your imagination, especially if you are preparing a dish for a festive table.
5. Drizzle with vegetable oil, season with salt and ground black pepper to taste. Garnish the appetizer with pickled red onions, which can be substituted with chopped green onions, fresh dill, or parsley.
Serve the herring with potatoes and onions immediately to the table, not forgetting sauces, mayonnaise or sour cream - they are ideal as an addition!
