Today we are preparing a delicious curd cake with raisins. It is high in calories and sweet. But its taste and structure will leave few people indifferent. Older people have known him since Soviet times, then it could be bought in any cookery.

I made a curd cake not according to GOST, I added raisins, but this did not affect the taste, on the contrary. Amazingly tasty and aromatic pastries are perfect for both evening tea and a cup of morning coffee.

Ingredients:

Wheat flour - 300 gr

Butter -150 gr

Sugar-200 gr

Cottage cheese -200 gr

Salt - a pinch

Chicken eggs -3 pcs

Light raisins -150 gr

Baking powder -10 gr

Powdered sugar -1 tbsp.

Step by step recipe:

Prepare all ingredients. Remove the butter from the refrigerator 1-2 hours before cooking, it should be very soft. Do the same with eggs and cottage cheese. Sift flour, salt and baking powder 2 times.

Put the raisins on a plate and cover with boiling water. Set aside for a while while you do the dough.

Put soft butter and sugar in a deep bowl, beat with a mixer until fluffy. The mass should turn white.

Add cottage cheese to it and beat with a mixer until smooth.

Add 3 eggs one by one to the dough, beat well with a mixer after each.

Pour in sifted flour (1 tbsp. l. set aside), salt and baking powder.

Throw the steamed raisins on a sieve and let the excess liquid drain. Then place it on a paper towel and dry well.

Place the dried raisins in a bowl and add a spoonful of flour, set aside. Stir.

Using a silicone spatula, gently whisk the flour into the butter / curd mixture. Stir until the dough is smooth and smooth.

Add the raisins, shaking off excess flour, and stir well.

Line a muffin baking dish with parchment and put the dough in it, flatten. Bake in a preheated oven to 175 degrees for about 50 minutes.

Check the readiness of the cake with a wooden skewer or a toothpick, it should come out of it completely dry.

Gently remove the finished baked goods along with the parchment from the mold and cool completely. Remove the paper, transfer to a dish and sprinkle with powdered sugar.

Cut the raisin cheesecake into pieces. Put the kettle on and invite your loved ones for a tea party.

If you replace raisins with any other dried fruits, for example, dried cherries or cranberries, prunes, dried apricots, then the cake will not be less tasty, it will just taste a little different! Feel free to experiment!

I also recommend adding orange or lemon zest to such baked goods, the aroma will be amazing!
