Stuffed mackerel in the oven

Today we will cook one of my favorite dishes - stuffed mackerel baked in the oven. The dish is not only tasty, it is also healthy, because this fish contains a huge amount of vitamins and minerals, so useful for the functioning of our body. Such fish can not only be cooked at home for lunch or dinner, it can be safely put on a festive table, lovers of mackerel will appreciate it for sure, I assure you.

Ingredients:

Mackerel -1 pc.

Onions - 50 g

Carrots - 70 g

Champignons - 200 g

Lean oil - 1 tablespoon

Sea salt - to taste

Ground black pepper - to taste

Lemon (or lime) - 1 tablespoon

How to cook:

Prepare foods from the list. Peel the onions and carrots, wash under running water, dry. Clean the mushrooms with a kitchen sponge. The mackerel should still be well frozen, but already a little soft, so it will be easier and easier to work with it.

With a sharp knife with a large blade, make two deep cuts along the ridge on both sides, carefully cut it, leaving the tail and head. Likewise, carefully remove the insides while they are frozen and cut out the gills. Peel off the black film inside the abdomen, try to remove the rib bones. Again, while the fish is semi-frozen, this is quite easy to do.

When all the manipulations with the removal of bones and viscera are completed, set the carcass aside until completely defrosted.

During this time, heat some lean refined oil in a skillet. Put onion chopped into half rings, fry for 2-3 minutes.

Add chopped or grated carrots to the onion and fry them together over medium heat for another 3 minutes.

After a while, add the mushrooms cut into slices. Simmer them with onions and carrots for about 5 minutes. Remove the cooked vegetables from the pan, let them cool.

Fold a large piece of foil in half, glossy side up. Lubricate it well with vegetable oil, lay out the mackerel. Season the fish with salt and pepper to taste, inside and out.

Pour lemon or lime juice on all sides.

Fill the belly of the mackerel with fried and cooled vegetables, gently roll the foil into a candy, wrap the edges and send to the oven preheated to 180 degrees for 20-25 minutes.

When the timer signals that the fish is ready, gently unfold the foil.

Serve baked stuffed mackerel with fresh tomatoes and your favorite sauce. It's delicious, I recommend it.
