Those who love pasties know that in addition to aromatic and juicy minced meat, the dough is also important in the dish, especially if it is brittle and crunchy. It is these components that make such huge minced meat pies popular all over the world.
You might be surprised, but to create a crispy dough, you need to add vodka to it. Such an alcoholic component, when frying, dries the workpieces even more, making them brittle, cracking right in the hands or in the mouth, exposing the scalding meat juice.
It is not difficult to create a dough, but it needs to be allowed to "rest" for 20 minutes for the gluten to activate. It will become plastic and obedient, pasties will turn out smooth, neat. By the way, the shelf life of the dough is about a day, so you can knead it in advance, wrap it in cling film and leave it in the refrigerator until it starts rolling.
Ingredients:
Chicken egg - 1 pc.
Wheat flour - 2.5 tbsp.
Warm water - 1 tbsp.
Vodka - 1.5 tbsp.
Salt - 3 pinches
Vegetable oil - 1 tbsp.
How to cook:
Prepare the food you need.
Pour warm water, vodka and vegetable oil into a deep container, add salt and stir. Instead of vodka, you can use cognac or moonshine, but remember that the alcohol must be of high quality, otherwise it will spoil the taste of the whole dish.
Add a third of the sifted wheat flour and knead the batter with a whisk or table fork. Baking powder is not added to the dough!
Rinse the chicken egg in water, pat dry with napkins and break, pouring the contents into a container. Mix it thoroughly into the dough.
Add another third of the wheat flour, leaving the last part to roll out. Knead a tight, pliable dough, but do not knead it too long, otherwise it will become too dense and tough.
Wrap the dough in plastic wrap or place it in a deep container and cover with a towel. Leave it alone for 20 minutes.
After the indicated time, stir again to restore plasticity. The crispy dough for pasties is completely ready - you can start preparing blanks for minced meat. To do this, you will need to form two rolls from it and cut them into portions, each of which is then rolled into a round layer.
