Dumplings with potatoes and bacon are, without a doubt, a delicious and satisfying dish that can be prepared for a homemade lunch or dinner. Ingredients:

Dough:

Kefir - 180 gr.

Salt - 1 tsp

Chicken egg - 1 pc.

Wheat flour - 320 gr.

Filling:

Potatoes - 500 gr.

Lard - 130 gr.

Bulb onions - 200 gr.

Vegetable oil - 1 tbsp.

Salt to taste

Ground black pepper - to taste

Step by step recipe:

Prepare all the food you need to make the dumplings. Lard is suitable fresh or salted - at your discretion. When using salty, be careful with salt when adding to the filling. Use kefir for kneading dough of any fat content.

First, knead the dough dough. It can be cooked in a food processor or by hand.

Pour kefir into a deep bowl and beat in a medium egg. Add salt. Stir with a spoon until all products are evenly distributed over the kefir mass.

Sift the flour in advance. You may need a little more or less. Sprinkle in small portions with liquid ingredients. Stir first with a spoon.

Then transfer the mass to a board, lightly dusty with flour, and knead a soft dough that does not stick to your hands. Add flour gradually until desired. Transfer the ball of dough back to the bowl, cover with a towel and let sit for 30 minutes.

In the meantime, prepare the filling of potatoes, lard and onions. Peel the tubers, rinse well, cut into small pieces. Transfer to a saucepan and cover with boiling water. Cook for 15-25 minutes after boiling until tender.

Cut the bacon into small cubes. Preheat a skillet with oil over medium heat. Move the pieces of bacon.

Fry, stirring with a spatula, until golden brown. All fat should be melted out.

Cut the peeled and washed onion into small pieces and add to the fried bacon. Stir and cook for 8-10 minutes over low heat.

When the potatoes are cooked, drain the broth. Mash the potato pieces with a crush.

Add half of the sautéed bacon with onions to the puree. Season with salt and ground pepper. Mix well. Cool the filling.

Divide the dough into two halves and work each one separately.

Roll out into a thin layer, dusting the board with flour.

Spread a small portion of the potato filling over each batter.

Pinch the edges of the dumplings tightly. At this step, the semi-finished products can be frozen in the freezer.

Remove the boiling water dumplings in a separate deep bowl. Season with leftover fried bacon. Stir.
