And today, using the example of a unique cranberry, I will recall the recipe in detail. Rich in vitamins, rich in color and taste, the mixture is useful for an interlayer of biscuits, serving with pancakes, casseroles, replaces ordinary granulated sugar in tea, becomes the basis for fruit drinks and compotes.
Cranberries are harvested in wet, swampy and peaty areas of the northern hemisphere, and not everyone manages to go for the miracle berry in person. Collecting by hand is a painstaking and laborious business. It's great that modern supermarkets sell any exotic all year round!

To cook cranberries mashed with sugar at home, take the foods listed.
The proportions in the recipes vary. Sometimes berries are mixed with granulated sugar at the rate of 1 to 1, sometimes 1 to 2 (200 g of sugar is taken per 100 g of cranberries). Usually double the weight of sugar is required for sweet berries - these are more prone to rotting. But our cranberries are high in natural acid, and therefore you can safely save on sugar.
I note that even without any preservatives, including granulated sugar, cranberries, under certain conditions (special baskets, tubs made of wood, ventilated, darkened and cool room with a favorable temperature) is safely stored until of the year.

Before starting grinding, we check each berry for quality factor. Dry, rotten, moldy, lethargic - discard. We remove the leaves, twigs. We put the cranberries in a bowl of cold water, rinse, then rinse under a running stream or, better, in a colander.

We lay out clean berries spaciously on paper or a cloth towel - leave at room temperature for 20-30 minutes, let dry completely. Stir from time to time.

The shell of a ripe cranberry is thin, tender, easily bursts, there is a lot of juice inside. Easily cope with any oppressive means at hand. Remember that juice splashes when you grind.

Pour sugar into the mashed berry gruel, mix.

We fill clean containers with mashed cranberries. We store it under a lid on a refrigerator shelf and use it as directed.
