Ingredients:
Wheat flour - 500 grams.
Chicken eggs - 3 pcs.
Kefir - 300 ml.
Cottage cheese - 400 grams.
Hard cheese - 200 grams.
Soda - 1 tsp
Salt to taste
Garlic - 3 cloves.
Vegetable oil - 2 tbsp.
Butter - 50 grams.
Dill greens - 1 bunch.
Step by step recipe:
To make khachapuri with cottage cheese and cheese, prepare all the ingredients according to the list. Use kefir as fat as possible or replace it with classic natural yogurt without additives. Choose dry cottage cheese, with a fat content of at least 18%. Flour must be sifted. Use the herbs you like, they will be tasty and aromatic with parsley and / or cilantro.
Take a deep, clean bowl, pour lukewarm kefir into it, add 1 egg and shake with a whisk.
Add salt and baking soda, mix well. It is not necessary to extinguish soda separately, as it will be extinguished in kefir.
Add flour in portions to kefir. Do not add everything at once, do not hammer the dough with it. Therefore, add in small portions, stirring with a spoon.
Pour in vegetable oil and mix well into the dough.
Add more flour if urgently needed. Set aside a little to give a tan while forming the cakes.
Place the mixture on a floured table and knead to a soft, elastic dough. Transfer it to a bowl, cover with a clean towel and set aside for 10-15 minutes to "rest".
To prepare the filling in a bowl, combine cottage cheese, 2 eggs, finely chopped dill and cheese grated on a medium grater. Stir well.
Divide the filling into 6 equal parts and roll into balls.
Divide the "rested" dough into 6 equal parts and form into balls.
Roll each bun on a slightly dusty surface into a small cake, put a lump of filling in the middle and gather the edges of the dough to the center, pinch them.
Roll the prepared cakes lightly with a rolling pin.
Fry the workpieces in a dry hot frying pan. On one side 3-4 minutes over medium heat, turn over and fry the second part under the lid for 1-2 minutes.
We take out the finished cakes on a plate and immediately grease them abundantly with melted butter.
We put ready-made khachapuri with cottage cheese and cheese in a stack on a plate. Their dough turns out to be unusually tender and soft, with a creamy taste and delicious filling.
Serve hot khachapuri with aromatic sweet tea.
