Ingredients:
Kefir - 300 gr.
Water - 250 ml
Salt - 1 tsp
Sugar - 2 tablespoons
Wheat flour - 240 g
Vegetable oil - 3 tbsp. l.
Vanilla sugar - 1 tsp
Step by step recipe:
Weigh all of the ingredients listed in this recipe. Use kefir of any fat content. If it stays in the refrigerator, it's okay, this one is perfect for pancake dough.
Instead of vanilla sugar, you can add a pinch of vanillin powder. If the aroma of vanilla is not to your liking, eliminate this component from the recipe.
Use odorless oil, wheat flour - the highest grade.
Choose a deep bowl to prevent splatter from scattering around the kitchen as you stir. Pour in kefir. Add granulated sugar, salt, vanilla sugar. Stir with a spoon until evenly distributed throughout the kefir mass.
Pour in vegetable oil. Mix well.
Boil water in a separate bowl. Pour boiling water into a bowl with the rest of the ingredients and shake quickly with a spoon / whisk.
Add flour immediately. Be sure to sift it through a fine sieve. Stir until smooth. The finished dough is pretty runny.
Set the skillet to moderate heat. If you are not sure about your dishes, then grease with vegetable oil for the first time. Heat very well. Pour a portion of the dough into the center. A ladle works best for this purpose. Spread the mixture quickly throughout the pan. Brown on both sides over medium heat.
Place the finished pancake on a flat plate. Repeat the procedure, and so on until the end of the dough in a bowl.

Serve hot custard pancakes. Sour cream, sweet sauce, condensed milk, honey harmonize well with them, jam and, of course, a hot cup tea.
