But you should not save on cheese curds, despite the fact that you will cook them until they are completely dissolved. Because the better the cheese, the tastier the soup will be.

Ingredients:
Minced meat - 300 g
Potatoes - 300 g
Carrots - 80 g
Onions - 50 g
Champignons - 150 g
Petiole celery - 30 g
Processed cheese - 100 g
Lean oil - 1 tablespoon
Parsley - 5 branches
Salt to taste
Ground black pepper - to taste
Water - 1.5 l
How to cook:
Prepare all the necessary products according to our list. Peel potatoes, onions and carrots, wash under running water along with fresh grass and other vegetables.
Pour one and a half liters of water into a two-liter saucepan, load potatoes cut into small cubes into it. Bring to a boil and cook for about 10 minutes.
At this time, heat the vegetable oil in a frying pan, put the diced onions into it. Fry for 2-3 minutes until translucent.
Then add chopped celery and carrots. If desired, the latter can be grated on a coarse grater.
Cut the mushrooms into thin slices, put in the pan. Cook the mixture over medium heat for another 3-4 minutes.
While the vegetables are cooking, place the minced meat in a deep bowl. Season it with salt and pepper, stir.
With wet hands, shape the meatballs into the same size, about the size of a walnut. Place them on a cutting board for now.
By this time, the vegetables should have been fried. Transfer them to a saucepan, let it simmer for 5 minutes.
Place the meatballs one by one into the broth. After boiling, cook the soup for 10 minutes.
Processed cheese of good quality and a trusted manufacturer, cut into small cubes or grate on a coarse grater. Transfer to soup. While constantly stirring the broth, dissolve the cheese completely. Now salt and pepper the dish to taste, cook for 3-5 minutes.
Throw chopped fresh herbs into the soup last, it is better if it is of two types - dill and parsley, so it is tastier and more aromatic. Turn off the stove, cover the pan with a lid and let the dish stand for ten minutes before serving.
Pour the finished infused cheese soup with meatballs into portions and serve with a slice of your favorite fresh of bread.
