Kefir pancakes with yeast

For breakfast we serve ruddy, flexible and soft pancakes on kefir with yeast. Let the dough stand for about half an hour in the warmth, then the pancakes themselves will appear friable, airy and porous. Serve with sour cream, jam, honey, berries - a safe bet for simple and delicious homemade baked goods.

Ingredients:

Kefir - 450 ml

Flour - about 350 g

Egg - 1 pc.

Dry yeast - 1 tsp l.

Sugar - 3 tbsp. l.

Vegetable oil - 50 ml

To bake yeast pancakes with kefir, take the products on the list. A fermented milk drink can be either high or medium fat, or fat-free. The main thing is a little warmed up - in such a yeast granules are more likely to wake up. If desired, the taste is enhanced with additional additives: salt, vanilla sugar, ground spices.

In the microwave or over the top heat of the stove, we warm up the kefir literally for 20-30 seconds, bring it to a moderately warm (not hot!) State. Pour into a working bowl, add a spoonful of granulated sugar and a portion of dry yeast. Shake vigorously and keep in a warm place for 10 minutes.

If you are replacing dry yeast with fresh / compressed yeast, take three times the weight (not 5 g or 1 tsp. l., and 15 g / 3 h. l.). Crumble and beat with sugar in warmed kefir.

Now add the egg and the remaining sugar to the bubbling composition (if necessary, salt, cinnamon, vanilla). Whisk thoroughly until smooth. Shake the egg white and yolk completely.

Pour in wheat flour in parts and knead the thick, sticky dough. Perhaps a little more or less flour will be required, depending on its quality, the volume of the egg. We remove all clots.

Leave the yeast dough for 15-30 minutes in the same warm corner.

Fry pancakes in a hot frying pan with the addition of refined lean oil: pry the dough (do not interfere!) spoon on the top layer, spread "islets" in hot oil and blush on both sides with moderate temperature.

If there is a lot of fat, transfer to a paper towel first. You can also bake with a minimum or no oil at all - in a pan with a non-stick coating, the shell of the products is dried according to the type pancakes.

We serve delicate pancakes, for example, with sour cream mixed with some aromatic jam.
