Potatoes occupy a special place in Belarusian cuisine. A wide variety of dishes are prepared from it, which are not similar to each other. They have gained popularity far beyond the borders of their country. For example, potato sorcerers are a very famous dish with an unusual name and taste. They can be prepared with various fillings; today we use minced meat.
Very often, sorcerers are confused with zrazy, but these are absolutely two different dishes. Unlike zraz, sorcerers cook from raw potatoes, and it is raw minced meat that is put inside. After frying, they are sure to reach readiness in the oven. The dish comes out tasty, juicy, satisfying and aromatic, so be sure to take this recipe into your mind.

Ingredients:
Potatoes - 1 kg.
Minced meat (pork + beef) - 300 gr.
Onion - 1 pc.
Garlic - 1 tooth
Flour - 1 tbsp.
Vegetable oil - 70 ml.
Water - 30 ml.
Salt, pepper - to taste
Sour cream - for serving
How to cook:
Prepare food.
Separate the head of onion and a clove of garlic from the film, wash, chop with a blender into gruel or chop very finely with a knife.
Combine the onion-garlic mixture with minced meat. Stir to distribute it evenly. Season the minced meat with salt and pepper to taste.
Peel the potato tubers from the top layer, wash, grate on the finest grater.
Salt the potato chips, remember with your palms to let the juice flow. Next, squeeze from it, getting dry potato cake. Let the juice stand, then drain it carefully, leaving a thick starch at the bottom of the bowl. Transfer it back to the potatoes.
Next, start to form blanks. Separate small portions from the main mass, form flat cakes, put raw minced meat in the middle of each. Raise the edges of the cake as if holding them together on top. This will hide all the minced meat inside. Give the blanks an oblong shape with your palms.
From the specified portion of products, approximately 7 medium-sized sorcerers will come out.
Lightly bread each piece in flour, shake off the excess. This process can be omitted and fried without breading.
Pour enough oil into the pan, heat well and then load the blanks. Grill them over moderate heat for about 5 minutes on both sides. No need to cover.
Transfer the ruddy sorcerers to a heat-resistant form, pour a little water into the bottom. Cover with foil or a special lid, load into the oven. Bake for about 40 minutes. To make sure that the minced meat is completely cooked inside, you can cut one copy into two parts with a knife.
Serve potato sorcerers with minced meat warm in tandem with sour cream.
