Tomato paste is a universal and important concentrate for culinary specialists, which allows you to saturate dishes with color and taste, prepare gravies and sauces on its basis, dressings for borscht and hodgepodge.

In this recipe, I share a variant of a silky tomato paste sauce with the aroma of basil, garlic and pepper. This is good chilled, along with sausages and sausages, tortillas and chips, shish kebabs, cutlets and chops. In addition, it is suitable for braising cabbage rolls, meatballs, lasagne, pizza and hot sandwiches.

Ingredients:

Tomato paste - 70 g

Starch - 1 tbsp. l.

Water - 200 ml

Sugar - 1 tbsp. l.

Salt - 0.3 tsp l.

Dried basil - 5 g

Garlic, herbs, hot peppers - to taste

To make a homogeneous tomato paste sauce at home, take the foods listed. At your discretion, you can change the degree of density. The more starch and less liquid, the thicker the sauce. But don't overdo it. It is important not to allow the formation of lumps - the clots will ruin the whole experience. Basically, you need to completely dissolve the salt and sugar crystals, season with all sorts of flavors and achieve a smooth thickening.

First, we lower a portion of tomato paste and starch into the cooking container. Suitable for both corn and potato. Without pouring any liquid, mix until gruel. Thus, it is easiest to dilute the composition in the future without lumps.

Immediately throw in the granulated sugar and salt. Dosage to taste. Stir again.

We pour in drinking cold water and put on an overhead fire. Maintain a moderate temperature and stir constantly, heating. We dilute the red mixture.

Add ground spices and / or dried herbs. I have basil and hot peppers. On the basis of a tomato base, you can cook a sauce with suneli hops, curry, and other seasoning mixtures based on Asian, Caucasian, Mexican or other cuisine.

While stirring, we continue to heat and bring to an active boil, uniform viscosity.

We remove the sample. We cool it down.

For greater sharpness, vinegar or lemon juice is introduced. Serving tomato sauce immediately, add chopped capers, garlic, fresh herbs - with them, it acquires granularity and texture.
