Not only cold snacks can be prepared from thin pita bread. For example, simply excellent pies are made from it, where lavash acts as a dough. Moreover, they can be both sweet and salty.
We offer a recipe for a delicious salty lavash pie with cottage cheese and cheese. As the latter, we take suluguni, which is distinguished by its fermented milk taste, elastic structure and the absence of a pronounced smell. This cheese is just perfect for use in baked goods.
The proposed cake is called "Crumpled". It got its name from its original appearance.

Ingredients:
Thin lavash - 250 gr.
Suluguni - 250 gr.
Granular cottage cheese - 250 gr.
Kefir - 150 ml.
Egg - 1 pc.
Greens - 10 gr.
White sesame - 1 tbsp
Butter - 10 gr.
Salt, pepper - to taste
How to cook:
Prepare all the foods on the list.
Lightly crush grainy curd with a fork, breaking large pieces into smaller ones. Suluguni grate. The size of the cheese shavings does not matter. Combine the prepared components in one deep container.
Rinse the dill, dry it slightly, chop finely and add to the main composition.
Season the mixture with salt and pepper to taste, mix well, completely combining all the components.
Break an egg into a separate bowl, pour kefir into it, mix thoroughly with a whisk until a homogeneous mass is obtained.
Cut the lavash into several rectangular pieces of approximately the same size. Lubricate each copy with an egg-kefir mixture. Leave in this state for 2 minutes so that the liquid saturates the dense pita bread, and it becomes softer. Otherwise, when rolled up, it will simply break. Leave the rest of the liquid for filling.
Lay the curd-cheese filling on top of each canvas, distributing it around the entire perimeter.
Roll the prepared sheets of lavash into rolls.
Grease the mold liberally with butter. Place the rolls with filling inside in a circle.
Pour the liquid mixture that you left on top.
Sprinkle with sesame seeds. Load the cake pan into the oven preheated to 200 degrees.
Bake for 20-25 minutes until golden brown on top.
"Crumpled" lavash pie with cottage cheese and cheese is tastier to use warm when the suluguni remains melted.
